Caramelized Onions
2 large onions , sliced (about 4 cups)
1 tablespoon brown sugar
1/8 cup vegan chicken-style broth
1 tablespoon freshly squeezed lemon juice
1/8 teaspoon salt or to taste
2 Tbsp. olive oil

In a large skillet over medium heat, put 2 tablespoons olive oil and when you notice that it is heating up, add the onions and the brown sugar, and cook, moving constantly with a wooden spoon, until the onions are very tender and golden brown, around 15 minutes. Add the vegan chicken-style broth, the lemon juice and the salt and cook, mixing it all well and keeping the spoon moving, until the liquid has been almost completely absorbed, from 3 to 4 more minutes. Bring off the heat. These a wonderful with baked potatoes, yams, steamed squash, as a side dish for rice, you can also throw them on top of your favorite patties as a topping instead of sauce.
