Every time that we post a recipe we try to make it versatile, easy and scrumptious as well as economical. This one fits all of those requisites perfectly! It can be prepared in so many ways it is almost a hundred recipes in one. We will show you what we mean with a few pictures.
Delicious Garbanzo Meats
A really scrumptious, economical and easy to make meat substitute!
1 1/2 cups cooked garbanzos
1/2 cup oats
1 medium-sized potato, raw
1 cup breadcrumbs
1/2 cup all-purpose flour
3/4 cup Do-Pep or gluten flour
2 Tbsp. sweet paprika powder
3 Tbsp. sesame seeds
Salt to taste
1 medium-sized onion, peeled and carsely chopped
1 tsp. garlic powder
1 tsp. Italian Seasoning or herbs of your choice that contain sweet basil
1 tsp. coriander powder
1 Tbsp. olive oil

Put in a blender the garbanzos, onion, potato with 1/2 cup water and process till smooth. Scrape into a bowl and add the rest of the ingredients,
leaving the Do-Pep for last. Mix very well until you have a dough with the consistency of bread dough. Shouldn't be too dry nor too wet.
Cover and let dough rest for about 15 minutes, so that the Do-Pep will really congeal the dough.
Take pieces and form balls and bake them at 350º F until golden brown. After that, you could serve them as is or with a sauce of your choice.
As you can see by the pictures, this same recipe can be used in different ways after it has ben cooked, you can for example, cump it like meatballs into your spaghetti or pomodoro pesto sauce and serve it with any pasta. You can serve it with rice or potatoes, baked yams or sweet potatoes topped with sauce or gravy as a side dish. You can oven-fry or olive-oil skillet fry them as little sausages. It can also be made into patties and used for sandwiches or pitas.

Delicious Eggplant "meats"

These are very, very tasty, and go well with rice, potatoes,
sweet potatoes, yams, you name it.They make a great side dish
or can be used as a morsel in abuffett table, like for a wedding,
or a large gathering of people or a church fellowship dinner.
They go wonderfully well with a savory spaghetti sauce.

1 eggplant, peeled, washed and cubed small.

In a bowl prepare a mixture of the following:

3 Tbsp. wheat germ
1/2 cup quick oats
1 Tbsp. onion powder
1/2 tbsp. garlic powder
1 tsp. sweet paprika powder
1/2 tbsp. Italian Seasoning
Salt to taste
1 cup whole wheat bread crumbs (you can make your own whole wheat bread crumbs by toasting bread and then pulverizing it in the blender or food processor)
at least 3 cups of whole wheat flour
1 tsp. olive oil
Mix all well.
Add eggplant and coat very well in the mixture. pressing down for form a dough.
Shape into croquettes or patties and bake at 300 degrees in the oven until golden
brown, flipping once to get both sides done.
Serve well coated with sauce.

Variation:
Glazed Eggplant "Meatballs"

This one looks very fancy and is suitable for a nice table for guests.
Serve with mounds of mashed potatoes, or baked yams or rice,
or add to a pasta dish!

Prepare the above recipe but roll into meatballs instead of patty shape.
While baking, baste them in the following sauce:

1/2 cup prepared homemade spaghetti sauce (your favorite)
1/2 cup pineapple jelly or 4 Tbsp. honey

Delicious Vegan Sausage Patties

1 cup dry lentils, well rinsed
2½ cup water or vegetable broth
Salt to taste
1 Tsp. olive oil
1/2 tsp. coriander
1/2 tsp. brown sugar
1 medium onion, chopped
1 medium carrot, chopped
1 celery stick, chopped
1 Roma tomato, coarsely chopped
2 cloves garlic, mashed or pressed
½ tsp. sweet paprika powder
1 Tsp. tomato sauce
¾ cup rolled oats
¾ cup whole wheat bread crumbs (toast your own bread and pulverize it then measure it)
1 cup red lentils , soaked overnight and then drained
2 cups mashed potatoes
All purpose flour

Soak lentils overnight, drain before using. Boil your potatoes, peel and mash, set aside till they cool. Put in a blender with all the other ingredients,
except the oats and the bread crumbs. Scrape into a bowl. If for some reason you think the mixture is a bit "runny", add a little of all purpose flour.
Add also 2 Tbsp. gluten flour or Do-Pep. Mix well. Form patties and bake till golden brown.

Variation: Substitite coriander for powdered ginger.

More Vegan Sausages These are REALLY GOOD!




Savory Vegan Sausages

1 1/2 cup quick oats
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
Salt to taste
1 cup breadcrumbs (you can make your own breadcrumbs by toasting your whole wheat bread and then pulverizing it in a blender or food processor, you can season them a bit if you like)
1 medium potato, raw, peeled
1/2 tsp. thyme
1/4 cup peppers (Anaheim are best, but if you don't have htem, Bell peppers)
1 medium size red onion
173 cup soy flour
1/2 cup sunflower seeds
1 cup water
1/3 cup vital gluten
1 Tbsp. olive oil

Peel your potato. In a blender, put the potato, the onion, and the sunflower seeds with less than 1 cup of water. Process till smooth and scrape into a bowl. Set aside.
Mix the quick oats with the vital gluten and all the dry seasonings. Then incorporate this dry mixture into the wet mixture, slowly adding the rest of the water, until you
have a dough. Take portions of that dough with your hands and roll them into sausage shape. Bake them at 400º F for 15 minutes, then lower the temperature to 350º F, turning them around, till they are golden brown on every side.
If you have the time, steam them, that will make them moist and chewy.

I know there are people who like to fry. i do not encourage frying since there are cardiovascular dangers associated with it.
That is the reason why I sugest steaming or baking.

Yield: Approximately 16 sausages.
You can make these and freeze them for using in many dishes.
If you want to use them in beans, stews and soups, you must use more vital gluten so that your sausages won't fall apart int he boiling liquid as it coooks. You can also scramble them with tofu, both whole and in slices,
add them to pasta, rice, potatoes cooked in tomato sauce, and many other dishes.

Variations:

1. Fried Sausages. If you absolutely must fry these sausages, fry them in olive oil, which is the healthier alternative. The following photo shows the sausages fried.










2. Savory Vegan Sausages with Tofu in Tomato Sauce:
First, cook your sausages following the recipe given above (you can bake them, steam or fry them). After you have cooked them, put in a small pot 1 cup of your favorite prepared tomato pasta sauce, heat it up and add sausage slices and 1 cup of tofu chunks. Cook till the sausage slices are moist and the tofu has absorbed the sauce. About 10 minutes at slow heat (if it boils, the tofu will just break apart). It is delicious as a side dish, especially for a breakfast or for a quick lunch. You can also use less sauce and prepare these for pita pockets or tortilla wraps (too much sauce will make them drip and mess up your pitas or wraps).
3. Sausage Chunks: You simply make your sausage dough, grab the dough by thick pieces, forming odd chunks with your hands and cook as before. These were then simmered for a few minutes in a spaghetti-style tomato sauce. They are delicious with potatoes, yams, baked squash, sweet potatoes and even rice! See how they look below.










4. Savory Sausages in Tomato Sauce: Finally, you can simmer them a bit in your favorite tomato pasta sauce and of course add them to your pasta or just use them as a side dish for baked potatoes or whatever you are having.
