Scrumptious and Easy Bean "Meatless" Meatballs

1 1/2 cups Red Kidney beans, cooked
1 Roma tomato
1/2 cup Anaheim peppers, chopped
1/2 cup red Bell peppers, chopped
1 medium size red onion, peeled and sliced
1 tsp. fennel seed ground
1/4 tsp. sage in powder
1/4 tsp. oregano
1 Tbsp. garlic powder
2 Tbsp. sweet paprika powder
1 1/2 cups Vital Gluten
1 1/2 cups soy flour
Salt to taste
1 tsp. coriander powder
1/2 tsp. sage powder
1/2 tsp. oregano powder
1 Tbsp. olive oil

In a blender, put the beans, the onion, the peppers and the tomato with a little water and blend till smooth. Scrape into a bowl, add the other ingredients and mix thoroughly into a soft dough, take 1 tablespoon on the palm of your hand and form themeatballs of whatever size you like them. Place on a greased cookie sheet and bake at 300º F, turning them ever so often until golden brown.
Serve as is or with your favorite sauce. Serve with rice, pasta, mashed potatoes, baked yams, sweet potatoes, squash or anything you like.

Through messaging I found out that the last zucchini patties were really loved. Well, here's another delicious yet simple recipe for patties using zucchini. Economical, nutritious and full of flavor, and easy as pie. What more can i say? Enjoy!
Carrot-Zucchini Patties

1 medium zise carrot, peeled and grated
1 medium size zuccini, grated
1 mediu
m zise red onion
1 celery stalk
1 tsp. granulated garlic
1/2 cup red p
epper, chopped
1/2 cup Anaheim peppr, chopped
3/4 cup tofu, mashed
1 tsp. turmeric
1/3 cup sesame seeds
1 1/4 cup soy f
lour
3 Tbsp. flour
1/4 cup water
1 tsp. sweet paprika powder
1 Roma or plum tomato
Salt to taste
1/2 tsp. coriander powder
1/2 tsp. Italian Seasoning (if you don't have any on hand, add 1/8 tsp. oregano, 1/4 tsp. dried sweet basil and 1/4 tsp. sage)
Put in the blender the celery, the two peppers and the tomato, with 1/4 cup water and blend till smooth. Scrape into a bowl and add the rest of the ingredients mixing well till they are well incorporated.
Form patties and place in a greased baking sheet and bake at 300º F till golden brown on both sides.
Serve as is or with a sauce or gravy of your choice!

Sunflower Seed Burgers

1/2 cup unsalted sunflower seeds
1 1/2 cups canned or cooked chickpeas, drained
1 Tbsp. onion powder or 1/2 of a red onion, peeled and sliced
1/2 cup oats
1 tablespoon chopped fresh parsley
Salt to taste
1 Roma or Plum tomato cut in chunks
1 Tbsp. olive oil
1/4 cup whole wheat bread crumbs (toast your own bread and pulverize it in your blender or food processor)
1 tsp. sweet paprika powder
1/2 tsp. garlic powder
1 celery stick, sliced
1/4 tsp. sweet basil
About 1 cup of water

In a blender, put the tomato cut in chunks, the celery stick slices, the parsley, the onion, (if you are not using onion powder),
the sunflower seeds and the chickpeas, add only sufficient water to blend into a soft paste. Scrape into a bowl, add the rest of
the ingredients, mixing well to incorporate flavors. Put in the refrigerator, covered, for 30 minutes.
After that, form patties and cook in a skillet, turning when golden brown. Or bake on a cookie sheet at 350º F for 30 minutes or till golden brown, turning once.
Serve as is or with your favorite sauce or gravy. It yields 4 burgers or more, depending on the size you make them. You may use them with bread or as a side dish for potatoes or rice.
