Tasty Bean Patties

These are easy and very flavorful patties. An excellent way to use leftover beans!

2 cups of red or pinto beans, cooked
1/2 cup quick oats
1 1/2 cups soy flour
3 Tbsp. tomato sauce
1 Tbsp. garlic powder
3 Tbsp. onion powder
2 Tbsp. olive oil
Salt to taste
1/2 tsp. rosemary powder
1 tsp. coriander, ground
1/2 tsp. tarragon, ground
1/2 cup walnuts, ground
4 Tbsp. water
Put the oats to soften in the water. Mash well the beans and mix them with the soy flour and the oats. Add the rest of the ingredients and form the patties. Bake them at 300º F, turning, till golden brown on both sides.

Tasty Eggplant Croquettes

1 eggplant
1/4 cup walnuts
1 cup brown rice, cooked
1 medium-size potato
1/ 4 cup Anaheim peppers, sliced
1/2 cup red Bell peppers, sliced
1 medium red onion, peeled and sliced
1 tsp. garlic powder
3/4 cup soy flour
Salt to taste
1/4 tsp. sage powder
1/4 tsp. rosemary powder
1 tsp. coriander seed ground
1/4 tsp. tarragon gound
3 tbsp. arrowroot or cronstarch
3 tbsp. sweet paprika powder
1/4 cup water

In the blender put all the ingredients except the flour and the arrowroot or cornstarch.
Scrape into a bowl. Mix in the flour and the arrowroot or cornstarch (taking care that the mixture will not turn lumpy!)
form the croquettes. Bake at 300º F in a cookie sheet, turn after 10 minutes baking, watch them, so that they will nor brown too much.
When golden brown on both sides, they're done!

You can make this dressing with purchased or homemade soy yogurt. If you want to make overnight soy yogurt, jsut take plain soy milk and drop into it the contents of a couple of capsules of acidophilus with a varied flora combination (the more strains, the thicker the yogurt),
leave overnight in a warm place. It is amazing and quite good!


1 cup soy yogurt
1 Tbsp. olive oil
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. dill weed
1/4 tsp. parsley
1/4 tsp. sweet paprika powder
2 tsp. brown sugar
1 tsp. lemon or lime juice (optional)
Salt to taste

Put in the blender and process till smooth.

Celery can be an awkward veggie. One many people don't know exactly what to do with. But it can be very tasty if you prepare it well. This is an easy way to make it and a way to get others who might not be "celery lovers", to enjoy it as well. The combination of parsley and celery forms a flavorful twosome that boosts even more this tasty side dish.
2 stalks of celery

1/2 cup parsley
1 cup soy flour

2 Tbsp. arrowroot or cornstarch
1 tsp. garlic powder

1 tsp. turmeric

2 Tbsp. onion powder

Salt to taste
1 1/2 Tbsp. sweet paprika powder

1 tsp. Italian Seasoning or 1/2 tsp. coriander seed, 1 pinch of Tarragon, 1 pinch of Sage, all ground and mixed together)

1/4 cup water
3 tsp. Egg replacer dissolved in 4 Tbsp. warm water (if you don't have egg replacer on hand, you m
ay use mashed tofu, do not need to add water to it).
Chop the celery very finely. Do the same with the parsley (for this recipe, prefer the parley that has small leaves). Prepare the egg replacer which will be equal to 2
eggs. Add the soy flour withthe rest of the ingredients. Mix all very well, adding the water slowly as you mix, and form the croquettes. Bake at 350º f until they are golden brown. Turn them over after 15 minutes of baking in the oven and allow to bake till golden brown on the other side. Serve with rice, mashed potatoes, baked yams, squash or even between slices of your favorite bread with all the toppings you like.

1/2 block tofu
1/4 cup sesame seeds
1 tsp. garlic powder
Salt to taste
1/2 tsp. Italian Seasoning
1/4 tsp. coriander seeds, ground
1 tsp. turmeric
1 Tbsp. sweet paprika powder
1 Tbsp. olive oil
2 Tbsp. cornstarch
1 Tbsp. onion powder
1/2 tsp. garlic powder

With a fork, mash the tofu well and add the rest of the ingredients, mixing them thoroughly. Take the misture by spoonfuls into the palm of your hand and form the croquettes. Bake them on an oiled sheet (oiled with olive oil)
at 300º F till golden brown on both sides.
