Scrumptious Rice with Muchrooms

This is a very easy to do but tasty dish that has all the good, nutritious stuff you want in your diet and great flavor to boot!
2 cups brown rice
2 cups Crimini mushroom, washed and sliced
2 Tbsp. Anaheim peppers, seeded and thinly sliced
1/2 cup sweet red peppers, sliced
1/4 cup sliced green olives
3 Tbsp. sweet paprika powder
Salt to taste
1 Tbsp. garlic powder
2 Tbsp. onion powder or 1 onion cut in half
1/2 tsp. Italian Seasoning
1/2 cup tomato sauce
4 Tbsp. olive oil

Cook your brown rice as usual or as per package instructions. In a deep skillet, place all the rest of the ingredients and cook them till tender, but still saucy.
Combine with the cooked rice, letting the rest of the liquid be absorbed by the rice to blend the flavors.

Plantain Orangina

Ingredients:

2 medium ripe plantains (not too ripe, not the ones with black skins. Prefer the ones that are yellow and have only black stains, but are still firm)
1 can of coconut milk
1 cup shredded coconut
1 jar of orange jelly
1/2 tsp. grated orange rind
1 tsp. of powder of cinnamon
1/4 cup shredded coconut


Peel the plantains and slice them lengthwise. Place them in a baking dish and cover them with the coconut milk. Sprinkle the top grated orange peel and cinnamon. Cover that with the shredded coconut. Bake in a pre-heated oven at 350 degrees for approximately 30 minutes.

Ingredients:

1 jar of all-fruit jelly in one of the following: apricot or pineapple

Optional: 1/2 tsp. finely grated lemon peel

Grease a baking dish and pour a little bit of coconut milk on the bottom of it.

Peel the plantains, slice them lengthwise. Place slices of plantain to cover the bottom.
Spoon all-fruit apricot jam on top of the plantain. Cover with more plantain. If you want to use the grated lemon peel, add it now.
Douse with coconut milk. Sprinkle with the shredded coconut.
Bake at 350ยบ F for 30 to 40 minutes, uncovered.

Tasty Lentils

Lentils are marvellous powerhouses of protein, vitamins and minerals. They are very versatile and can be prepared in a variety of ways. This is one delicious and easy way to prepare them.
2 cups lentils
3 bay leaves
1 large onion, peeled and cut in half
1 Tbsp. garlic powder or 2 large garlic cloves, peeled (whole)
1 Anaheim pepper, seeded and chopped
3 Tbsp. sweet paprika powder
2 Tbsp. chopped fresh cilantro
1 cup tomato sauce
Salt to taste
1/4 cup olive oil
Water to cover lentils

Cover the lentils with water, add the 3 bay leaves. boil till soft, add the rest of the ingredients and cook till you have a nice, thick sauce. Serve as a side dish for rice, mashed potatoes, baked yams, etc.

Simple to make and top with your favorite sauce or gravy, these will be a wonderful side dish for just about anything or a great addition to any sandwich or burger!
1 cup brown rice (cooked)
1 medium tomato, peeled and sliced
1 raw potato
1/2 Anaheim pepper
3 slices whole wheat bread
1/2 cup wheat germ
2 Tbsp. sweet paprika powder
3 tbsp. cornstarch
1 tbsp. onion powder
1/2 tsp. garlic powder
Salt to taste
1/4 tsp. sage
1/4 tsp. rosemary
1/4 tsp. sweet basil
1/2 cup water

In a blender, process till smooth the potato, the tomato and the Anaheim pepper.
Scrape into a bowl. Add the rest of the ingredients and mix well. Form patties the size you like best.
Cook in a skillet barely "painted" with olive oil until golden brown on both sides.
