These are truly delicious! We will show you two different ways in which to make them, with two totally different results.
This week, we'll make the basic sandwich meaties, which you can enjoy with your favorite sandwich or pita bread.

1 raw potato, peeled and coarsely chopped
1 small red onion, peeled and chunked
1 1/2 cups whole wheat flour
1 cup cooked brown rice
1 cup cracked wheat cooked as per package instructions
1/2 cup sesame seeds
1/4 cup fresh mint, minced or 1 tsp. dried mint
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
1/2 tsp. marjoram powder
1 medium tomato
Salt to taste
3 Tbsp. cornstarch

In a blender, process the potato, the tomato, the red onion, brown rice, cracked wheat, and the mint (if using fresh)
with barely enough water to turn it into a smooth paste. Scrape into a bowl and add the rest of the ingredients, mixing thoroughly.
With your hands, form your meaties. You can make them long and thin, or medium-sized and a bit thicker.
In a skillet barely "painted" with olive oil, cook your meaties till golden brown. Flip to the other side and finish cooking till golden brown.

Split Pea Steaks

These are very easy to make, tasty, economical and versatile. You can use them as a side dish to rice, mashed potatoes, baked yams, etc., but you can also use them in tasty sandwiches.
You can use them as is, or smothered in your favorite sauce. Try them today!

1 cup split peas, already cooked till soft (leaving only about 1/2 cup water)
1 1/2 cups whole wheat flour
2 Tbsp. cornstarch
2 Tbsp. wheat germ
1/3 cup sesame seeds
Salt to taste
1 small tomato, seeded and cut in chunks
1 stalk celery, well washed
2 Tbsp. onion powder (or 1 tsp. onion powder if you are not an onion lover)
1/2 tsp. garlic powder
2 Tbsp. sweet paprika powder
1/4 tsp. sage powder
1/2 tsp. coriander powder
1 tsp. olive oil

In a blender, put the celery, the tomato, the sesame seeds and the split peas with a
little bit of the water in which you cooked the split peas (about 1/2 cup water), process till smooth.

Scrape into a bowl and add the rest of the ingredients incorporating well.
Cook in a hot skillet oiled with olive oil about 12 minutes or till golden brown. Flip to the other side
and cook till golden brown.

Yield: About 1 dozen (depends on size you make them)

Tasty Vegan Skillet Crumbles

These are very tasty and easy to make and they go with just about anything you can put together!
Try them in your next meal.

1 cup brown rice cooked as per package instructions
1/2 cup millet cooked to the consistency of rice (follow package instructions)
1/2 cup quick oats
1/2 cup cracked wheat cooked to the consistency of rice (follow package instructions)
1 1/2 whole wheat flour
4 Tbsp. cornstarch
2 Tbsp. onion powder or 1/2 medium onion, sliced
Salt to taste
2 1/2 Tbsp. sweet paprika powder
1 tsp. garlic powder
1/2 tsp. coriander powder
1/4 tsp. sage powder
1 Tbsp. olive oil
1/3 cup sesame seeds
2 cups crusty bread chunks


Soak the crusty bread in a bowl with half a cup of water until mushy. If necessary, mash it until it is completely soft.
In a blender process the rice, millet, quick oats and cracked wheat with the onion (if you use onion slices), until smooth.
Scrape into the same bowl where you have the bread, mix well and add the rest of the ingredients, blending until you have
a soft dough that is neither too hard nor too mushy. If it is too stiff, add a bit of water.

Heat up a skillet with 1 Tbsp. olive oil and put all the dough in that skillet and you cook it, stirring almost constantly until
the crumbles will begin to form, continue cooking and turning until they are golden brown.

Optional:
If you want to, when the crumbles are nearly done, add onion rings, red and green sweet pepper slivers and chopped tomatoes,
and saute with the crumbles.

These crumbles are delicious with mashed potatoes and a side dish for baked yams, sweet potatoes, rice, or as a topping to
pasta!

Cracked Wheat Rollies

These are so tasty it is impossible to eat just one! They make a scrumptious side dish, they are great as is or dipped into your favorite sauce or gravy. Rollies are a great meat substitute for any meal. Try them, you will become a rolly fan!

1 cup cracked wheat, well cooked according to package (to the consistency of rice)
1/2 cup quick oats
1 cup whole wheat flour
1/4 cup sesame seeds
2 Tablespoons cornstarch
1 1/2 Tbsp. sweet paprika powder
1 tsp. onion powder
1/2 tsp. garlic powder
Salt to taste
1 cup water

Put cracked wheat in blender with 1/2 cup water and process till smooth.
Scrape into a bowl and add the rest of the ingredients and the rest of the water, slowly as you mix till you have a soft dough, which is neither stiff nor runny. Form the rollies by dropping a tablespoon of the dough on the palm of your hand and rolling the mixture into shape.
Drop into a greased cookie sheet and bake at 350° for 25 minutes, then turn and leave till golden brown.
