This is a super easy gluten free meat substitute. Once you make it, you can eat it as is in sandwiches or you can drop it into pasta sauce, just long enough for it to absorb some of the moisture and have it as a side with rice, potatoes, yams or whatever you like, you can also put it in a skillet with peppers, onion rings, chopped tomatoes and whatever you like and just heat it up until it absorbs the flavors and use it to top just about anything you are having. Enjoy!<br />

1 cup buckwheat (not the flour but the grain) soak in 1 cup of water for at least 1 hour<br />
You will notice that without having to cook it the grain will expand and have like a little bit of foam all around it.<br />
Scoop into a blender and process it with 1/2 cup sliced raw almonds till smooth.<br />
Scrape into a bowl and let it rest for at least 1 more hour. Preheat your oven at 350º F.<br />
Then, add:<br />
1 Tbsp. sweet paprika powder<br />
1/2 tsp. onion powder<br />
1/2 tsp. garlic powder<br />
1/4 tsp. coriander powder<br />
1 tsp. Vegan Chicken-Style Seasoning<br />
Salt to taste<br />
1 tsp. olive oil<br />
Mix well.<br />
Oil a loaf pan Scoop the mixture into the pan, evening the top. Raise the oven temperature to 400º F and bake for 40 to 1 hour.<br />
Let cool before slicing or cubing.<br />

Serves 2 or 4 people depending on size of serving slices.<br />

There is nothing like a good, savory, hearty soup on a cold day! This one is perfect, so tasty and satisfying that you will make it again and again.<br />
<br />
1 medium Kabocha squash<br />
1 large carrot, peeled and sliced<br />
1 cup gluten free brown rice penne (or pasta of your choice)<br />
5 medium red potatoes, peeled and cubed<br />
2 celery sticks, sliced<br />
A handful of fresh parsley<br />
1 tsp. vegan Chicken-Style Seasoning<br />
About 1 cup of chopped cabbage<br />
1 tsp. onion powder<br />
1/2 tsp. garlic powder<br />
1 tsp. sweet paprika powder<br />
Salt to taste<br />
Olive oil (optional)<br />

Peel and cut your vegetables, set aside. Place the squash in the oven and roast it at 450 F for about 45 mins. Take out of the oven and let it cool a little bit, cut it into pieces, peel and seed it.<br />
Put it in a food processor or blender and process with just enough water to make a cream. Scrape into a large pot. Drop your vegetables (except the cabbage) into the pot and the seasonings.<br />
Cook until the seasonings begin to get soft. Add the cabbage and the pasta and cook until the cabbage is just tender and the pasta is al dente. If you wish, spritz on it a little bit of extra virgin olive oil before serving.<br />
<br />
Serve with crusty bread.<br />

5 red potatoes (2 small and 3 large ones), peeled and cut into small pieces<br />
1 tsp. aluminum-free baking powder<br />
1 tsp. aluminum-free baking soda<br />
1 cup sweet rice flour<br />
1 Tbsp. tapioca powder<br />
1 Tbsp. cornstarch<br />
1 tsp. salt or to taste<br />
1 tsp. garlic powder<br />
1 tsp. onion powder<br />
1 tsp. vegan Chicken-style Seasoning<br />
1/4 cup toasted cashews<br />
1/4 cup sliced raw almonds<br />
2 cups of water<br />
1 Tbsp. olive oil<br />

Preheat oven at 450 F°. In a blender process the almonds and the cashews with the water to turn them into milk. Pour into a mixing bowl. Mix in the olive oil. In another bowl, mix all the dry ingredients thoroughly. Incorporate into the wet mixture, making sure you have no lumps.<br />
Grease a loaf baking dish, put your potatoes in it and pour the milk mixture over it. Bake for an hour.<br />
<br />
Yield: If used for a full meal with a salad and a side of vegan sausage or meatlets (check out our meat subs, we have plenty), it serves 2, if only portions are added to a meal with baked beans and the meatlets, for example, it serves 4.<br />

Since one member of our household has had to go gluten free we have been trying to come up with tasty alternatives to gluten-loaded vegan fare and some have been great and some not so great. It has been an interesting learning adventure. These steals are easy to make and super tasty.<br />

In a blender, with very little water, process the tomato, potato, asparagus, carrot, celery brown rice, walnut pieces, until smooth.<br />
Scrape into a bowl and add the seasonings, adding barely enough water to form a firm dough.<br />
Drop by large spoonfuls into a hot skillet barely painted with olive oil and cook till golden on both sides, do not flip until edges have set.<br />

Yield depends on the size of steaks.<br />

3 Tbsp. sweet paprika powder<br />
1 tsp.onion powder<br />
1/2 tsp. garlic powder<br />

1/2 cup water<br />

In a food processor or blender process all the vegetables, the nuts and herbs with as little of the water as possible. Scrape the paste into a bowl and add the rest of the ingredients and the rest of the water,<br />
mixing well. Put 1 1/2 Tbsp. olive oil in skillet and drop the mixture into it by large tablespoonfuls and cook, moving it constantly do that it won't burn, until the mixture begins to congeal and set. When it does, transfer into an oiled baking dish and<br />
finish cooking in the oven at 400° F until the "meat" is golden brown.<br />

Breakfast puddings are very easy to make and at times when fruit is abundant, they are really, really special. But you can make this pudding any time of the yer, in winter you can have it hot in summer, at room temperature or even cold. In a bowl, process your fruit (peel, slice, mash). Grease lightly a baking pan (I use a 1 pound loaf pan, 8 1/2" x 4 1/2") and set it aside.<br />
Mix all your dry ingredints well. Combine the milk with the vanilla, the coconut oil, the jam and the sugar. Add to the fruit and mix well. Add the rest of the ingredients and combine well.<br />
Scoop into the prepared pan. Bake at 400º F for 30 minutes. Let cool before you dig in.<br />

We are getting more and more gluten free in our vegan diet. One of the things that is always something to be tackled is a bread substitute!<br />
This an other puddings have been an easy, quick and delicious way to make a bread substitute that will fit the bill.<br />
You can have it cold or hot or at room temperature. We usually top them with homemade compote or jelly. You can use a dollop of vegan<br />
sour cream or yogurt or drizzel it with melted chocolate or carob or anything else you like.<br />
In the photo you see that I dropped spoonfuls of fruit compote on top of the baking pudding midway, for flavor and to decorate it, that is optional.<br />
<br />
2 very ripe bananas, mashed<br />
1/4 cup thawed frozen strawberries, mashed, but leaving pieces of fruit (do not puree)<br />
4 Tablesponfuls of fresh blackberries, mashed, but leaving pieces of fruit (do not puree)<br />
1/4 cup pineapple chunks, mashed, but leaving pieces of fruit (do not puree)<br />
4 Tbsp. raisins<br />
1 1/4 cup grape juice<br />
1 tsp. vanilla<br />
1/8 tsp. cinnamon<br />
1/2 cup brown sugar<br />
2 Tbsp. cornstarch<br />
2 Tbsp. tapioca flour<br />

In a bowl, mash the bananas, and only half mash the other fruit, except the raisins. Add the rest of the ingredients, mixing well to avoid lumps.<br />
Scrape into a baking dish and bake at 400º F for 20 to 30 minutes.<br />

These are really savory and so delicious that you won't miss the wheat! When you put them on the cookie sheet, try to pile up the mixture so that the Meatlets will be a bit thick and not too thin, so that they will be chewier.<br />
You can serve them as is as a side, use them as inserts for sandwiches and wraps, top them with sauce or gravy and slice them into strips and toss them into a tofu skillet. Enjoy!<br />

In a food processor or blender, process the tofu, the almonds, the milk, the cornstarch, the seasonings, and the water, till you have a smooth cream.<br />
Pour into a large baking dish and add the sweet potatoes. You must cover the sweet potatoes with the liquid. If the liquid you have does not cover the sweet potatoes, add a bit more<br />
water and adjust seasonings. Pour the olive oil on top of the mixture and combine.<br />
Bake at 400º F for 1 and a half hours or until potatoes are golden brown.<br />

This is a super easy soup but it's tremendously tasty. Try to increase the onion flavor as much as it is palatable to your taste buds, because that is the secret of this soup's savory goodness. You can use a whole sweet onion and then add onion powder cautiously until you reach your limit. At home, we have it with a full Tablespoon of onion powder and we love it, but if you are not used to food that is really spicy, go easy until you reach the point that you will enjoy. We are not shy about olive oil either (it is rich in antioxidants after all), but you season the soup to your taste. Rollies have always been very popular on our blog. They are easy to make, savory and go well as a side with a great variety of dishes. They also make great finger food for social gatherings. Here is a new version of these delicious morsels!</div>

1 cup cracked wheat, well cooked according to package (to the consistency of rice)<br />
1/2 cup quick oats<br />
1 cup whole wheat flour<br />
1/4 cup sesame seeds<br />
2 Tablespoons cornstarch<br />
1 1/2 Tbsp. sweet paprika powder<br />
1 teaspoon coriander powder<br />
1/4 tsp. cumin powder<br />
1/8 tsp. turmeric powder<br />
1/4 tsp cardamon powder<br />
Pinch brown sugar<br />
1 tsp. vegan chicken style seasoning<br />
1 tsp. onion powder<br />
1/2 tsp. garlic powder<br />
1 plum or Roma tomato, chopped<br />
Salt to taste<br />
1 cup water (or less)<br />
<br />
Put cracked wheat in blender with 1/4 to 1/2 cup water and the chopped tomato, process till smooth.<br />
Scrape into a bowl and add the rest of the ingredients and the rest of the water, slowly as you mix till you have a soft dough, which is neither stiff nor runny. Form the rollies by dropping a tablespoon of the dough on the palm of your hand and rolling the mixture into shape.<br />
Drop into a greased cookie sheet and bake at 350° for 25 minutes, then turn and leave till golden brown.<br />
You can serve these as is or topped with your favorite sauce. Enjoy!<br />

These are super tasty and the best thing of all is that you can use them in different ways. You can make steaks an top them with your favorite sauce or just a generous mound of sauteed onions, and serve them as a delicious side or you can cute them into thick strips and drop them into your favorite sauce until heated through and they have absorbed some of the liquid and serve them like that, either way, they are wonderfully savory. With a little water, put the potato, tomato, carrot, and the celery in a food processor or blender and process till smooth. Scrape into a bowl. Add the rest of the ingredients and combine into a smooth dough, not runny and without lumps.<br />
Heat a skillet that has been barely painted with olive oil and drop the mixture into the skillet, spreading it with a spoon into a "steak" that is the size and the thickness that you prefer.<br />
Cook until it set on one side before you flipping to the other side. Continue cooking till golden brown.<br />

When you make this delicious cream soup it will look like green mud, but boy is it tasty! One you taste the first spoonful, you will love it! It is not common to add vegetables such as asparagus to patties, but these came out extremely tasty, a wonderful surprise for us and a treat for those of you who are adventurous in the kitchen. Try them, they are worth it!<br />

1 1/2 cups semolina<br />
3/4 cup tapioca flour<br />
3 slices whole wheat or whole grains bread, toasted and crumbled in a blender or food processor to form coarse bread crumbs<br />
3 medium size potatoes, peeled and cubed<br />
1 large carrot, peeled and sliced<br />
1 cup cooked asparagus, chopped<br />
1 tomato, cut in chunks<br />
1/4 cup each of sweet green and red peppers cut into strips<br />
1 cup of oats<br />
2 Tbsp. sweet paprika powder<br />
2 Tbsp. onion powder (if you are not a great onion lover, reduce this amount to 1 tsp.)<br />
1 Tbsp. galic powder or to taste (1/2 tsp. for those who do not like their food too spicy)<br />

First, peel and cut the potatoes into pieces and put them to boil in a large pot.<br />
When the potatoes are soft, put the cashews, almonds, seasonings, water and milk in the blender and process till smooth. Drain some but not all of the water in which the potatoes have boiled.<br />
Pour the sauce on top of the potatoes and add the asparagus, the macaroni and the broccoli and cook till the pasta and the veggies are soft but not mushy.<br />
Serve quickly, it thickens a lot!<br />

Mash the potatoes, adding the water, the oil and the milk as you go. In a separate bowl, mix well all the dry ingredients, incorporate this mixture into the potatoes, making sure it is well blended in.
