Sunflower Seed Burgers
1/2 cup unsalted sunflower seeds
1 1/2 cups canned or cooked chickpeas, drained
1 Tbsp. onion powder or 1/2 of a red onion, peeled and sliced
1/2 cup oats
1 tablespoon chopped fresh parsley
Salt to taste
1 Roma or Plum tomato cut in chunks
1 Tbsp. olive oil
1/4 cup whole wheat bread crumbs (toast your own bread and pulverize it in your blender or food processor)
1 tsp. sweet paprika powder
1/2 tsp. garlic powder
1 celery stick, sliced
1/4 tsp. sweet basil
About 1 cup of water
In a blender, put the tomato cut in chunks, the celery stick slices, the parsley, the onion, (if you are not using onion powder),
the sunflower seeds and the chickpeas, add only sufficient water to blend into a soft paste. Scrape into a bowl, add the rest of
the ingredients, mixing well to incorporate flavors. Put in the refrigerator, covered, for 30 minutes.
After that, form patties and cook in a skillet, turning when golden brown. Or bake on a cookie sheet at 350ยบ F for 30 minutes or till golden brown, turning once.
Serve as is or with your favorite sauce or gravy. It yields 4 burgers or more, depending on the size you make them. You may use them with bread or as a side dish for potatoes or rice.
