Celery and Parsley Croquettes
Celery can be an awkward veggie. One many people don't know exactly what to do with. But it can be very tasty if you prepare it well. This is an easy way to make it and a way to get others who might not be "celery lovers", to enjoy it as well. The combination of parsley and celery forms a flavorful twosome that boosts even more this tasty side dish.
2 stalks of celery
1/2 cup parsley
1 cup soy flour
2 Tbsp. arrowroot or cornstarch
1 tsp. garlic powder
1 tsp. turmeric
2 Tbsp. onion powder
Salt to taste
1 1/2 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning or 1/2 tsp. coriander seed, 1 pinch of Tarragon, 1 pinch of Sage, all ground and mixed together)
1/4 cup water
3 tsp. Egg replacer dissolved in 4 Tbsp. warm water (if you don't have egg replacer on hand, you may use mashed tofu, do not need to add water to it).
Chop the celery very finely. Do the same with the parsley (for this recipe, prefer the parley that has small leaves). Prepare the egg replacer which will be equal to 2 eggs. Add the soy flour withthe rest of the ingredients. Mix all very well, adding the water slowly as you mix, and form the croquettes. Bake at 350ยบ f until they are golden brown. Turn them over after 15 minutes of baking in the oven and allow to bake till golden brown on the other side. Serve with rice, mashed potatoes, baked yams, squash or even between slices of your favorite bread with all the toppings you like.
