Bean Patties---2
These are very simple to make, economical, nutritious and ho so very tasty!
2 cups red or pinto beans, cooked or leftover
1 cup bread crumbs (you can make your own by toasting bread and then pulverizing it in the blender or food processor)
1 1/2 cups soy flour
1 Roma tomato
2 Tbsp. tomato sauce
1 Tbsp. garlic powder
3 Tbsp. onion powder
2 Tbsp. olive oil
Salt to taste
1/2 tsp. sweet basil powder
1 tsp. coriander seed ground
1/2 tsp. Italian Seasoning
4 Tbsp. water
Put the tomato in the blender with a tiny bit of water and turn it into a puree. Scrape it into a bowl. Mash well the beans and mix them with the tomato puree and add the bread crumbs. Mix thoroughly. Add all the other ingredients and form into patties. Bake them at 300ยบ F till well done.
Serve with sauce, gravy or as is. The can be put in a bun with trimmings also.
