These are absolutely delicious and very tasty. Easy to make and versatile as can be!
You can use them as a side dish or if you're making a quick lunch, just make them the center of the meal, add one of our
delicious sausage or meatballs recipes, a good raw salad and you've got a meal! The last time they were made at our home, they were accompanied by rice with vegetables and a green salad.

1 cup yellow cornmeal
2 Tbsp. unbleached flour
1 cup whole kernel corn from can or frozen (thawed)
1 Tbsp. olive oil
Salt to taste
2 Tbsp. soy flour
1/2 cup soy milk
1 Tbsp. anise seeds (vital for this recipe's delicious flavor, don't leave them out!)
Enough water to form a light dough

Put kernel corn with a little bit of water, process till smooth, scrape into a bowl, add the rest of the ingredients, mixing well till all is well combined. You must have a soft dough, not a batter, not a runny mixture. Grease a skillet with olive oil. Take large spoonfuls of the mixture and drop them in the hot skillet. Cook till golden on both sides.

Delicious Rice with Noodles

This rice is very easy to make and it is an unusual treat that goes well with all of the vegan meats that we have shared with you in this blog. It also goes well with any vegan meatloaf.
1 1/2 cups brown rice already cooked.
1 cup very fine noodles
2 tbsp. olive oil
1/2 tsp. garlic
1 Tbsp. onion powder
1 Tbsp. turmeric
Salt to taste if needed
1/2 cup water

Place the noodles in a tray and put them in the oven at 300°F till they are golden brown.
Once the noodles are toasted, put them in a pot with a little bit of water and boil them until they are tender. Take them from the heat and drain the water well. Dump them into a bowl. Add the rice and all the seasonings. Mix well. Put everything in a pot and cook for 10 to 15 minutes, covered, till heated through and all the flavors are blended in.

Spaghetti Croquettes

Ever tried a nice recipe that was so good it was almost as good as junk food? This is something like that!
You can vary this recipe to the hilt just by changing some of its ingredients, for example, by changing the pasta you use (you can make them with brown rice spaghetti, or whole wheat spaghetti, or corn spaghetti, etc.) You can also add olives, mushrooms, or just vary the pasta sauce!
3 cups spaghetti cooked with their tomato spaghetti sauce of your choice
With a fork or with a knife, cut the spaghetti into smaller pieces, so that they will form better into the croquettes.
Set aside.
In a bowl, mix the following thoroughly:
3/4 cup all-purpose flour
3 Tbsp. breadcrumbs
1 tsp. onion powder
Salt to taste
A sprinkle of garlic powder
Add:
1 Tbsp. olive oil
1/2 cup water
Make sure the mixture is smooth, without any lumps.
Incorporate this smooth batter into the spaghetti mixture and form into croquettes.
Cook in a skillet oiled with olive oil until they are golden brown on both sides.

Delicious Vegan Sausages With Wheat

These are really easy!
2 Tbsp. nutritional yeast
1 Tbsp. sweet paprika powder
2 tsp. onion powder
1/4 tsp. sage
1/4 tsp. thyme
1/4 tsp. marjoram
1/4 tsp. rosemary
2 stalks celery
1/2 cup fresh parsley, minced
Salt to taste
1/8 tsp. brown sugar
1 Roma tomato, seeded and coarsely chopped
1 cup whole wheat kernels, cooked until it "opens' to the consistency of rice
1 1/2 cups soy flour
1 medim onion, peeled and sliced
3 slices whole wheat bread, torn in pieces
1 cup brown rice, cooked, could be leftovers
1/2 cup Anaheim and red Bell peppers, chopped
1 Tbsp. garlic powder
2 Tbsp. olive oil
Salt to taste
1 cup water
1/4 cup nutritional yeast
1/2 Do-pep or gluten flour

In a blender, put the peppers, the tomato, with 1/2 cup brown rice, the bread and some of the water. Process till smooth. Scrape into a bowl. Add the rest of the ingredients, including the rest of the cooked rice and the wheat, to give consistency to the burgers, adding the Do-pep last.
Let the mixture rest for about 10 minutes, so that the Do-pep will work.
Form small sausages or flatten to be patties if you would prefer, and cook in a skillet barely "painted" with olive oil till golden brown on both sides.
Add your favorite sauce.
