This is a delicious baked bread pudding which is a favorite at home for breakfast. It is easy to make, nutritious and quick.
2 cups brown rice cooked
1/2 cup raisins
1 apple, peeled and chopped thinly
1/4 cup shredded coconut
1/2 cup pineapple tidbits
1/4 cup walunt pieces
1/4 cup sliced almonds
3 Tbsp. brown sugar
1/4 tsp. salt or to taste
2 cups soy milk
In a bowl, mix all your ingredients, and scoop into a baking dish.
