I don't know about you, but to me, summer is the time of year when I appreciate sandwiches and salads more than at any other time! This salad dressing does double duty, you can drizzle it over a pita bread salad, you can pour it over a green salad and it is absolutely delicious with potato salad. Enjoy!
1/2 cup macaroni (cooked but without pasta sauce)
1/2 cup sweet pickle relish
1 tomato, seeded and chopped
1 sweet red pepper, seeded and chopped
1 Tbsp. sweet paprika powder
1/2 red onion, peeled and coarsely chopped
1 clove garlic or 1/2 tsp. garlic powder
Salt to taste
Cook your macaroni (or use leftover pasta, it doesn't have sauce on it). Add all the ingredients, including the pasta into a food processor or a blender and process till creamy smooth. Refrigerate until ready to use.

This sounds like a great dressing! Perfect for summer salads. The pasta noodles would make it nice & creamy and the relish would give it a good zing.

Thank you +Kimmythevegan, yes! that is exactly right. Once you blitz the pasta noodles you have a perfect way to get a creamy dressing which clings to either crunchy raw vegetables, leafy greens or potatoes. It is great to top salad-stuffed pitas and to pour into tortilla wraps also. Enjoy!
I had to read the recipe a few times to make sure you meant to add the pasta! That is such a cool idea and a great way to make the dressing creamy!
Thank you +Nary Ellen - VNutrition, yes, that is the secret for a creamy and thick dressing all the time! You can add a bit more pasta if you're going to use the leftovers of the dressing for a sandwich spread, it works great!
