This cornbread is dense but it is absolutely scrumptious, almost like a dessert!
The secret are the anise seeds (NEVER leave them out!) they give this recipe an aroma and a flavor that is quite delicious and unique.
You can have it in many ways, as is, with a bit of vegan cream cheese or sour cream, with pimento cheese, or
even for lunch with your favorite tomato sauce and a side serving of scrambled tofu or with some delicious vegan sausages.

2 cups cornmeal
1 cup frozen corn
1 cup all purpose flour
1/2 block of tofu
4 Tbsp. olive oil
2 tsp. salt
1/2 cup brown sugar
1/4 cup anise seeds
1 cup soy milk

Put in the blender the frozen corn and hte tofu and process till creamy.Scrape into a bowl and add the other ingredients, incorporating them well.Put the mixture in a greased pan and bake till it is golden brown and the crust opens up.
