
Sometimes youneed a quick tasty side dish to add to that almost spur-of-the-moment meal or just something to add to an old and favorite recipe. Well, here's something you can use!
1 cup cracked wheat cooked following package instructions (to the point of being soft like rice)
1/2 cup potato flakes
1/2 cup all-purpose flour
1 Tbsp. sweet paprika powder (you can use smoked paprika powder if you like)
1 Tbsp. onion powder
1 tsp. garlic powder
Salt to taste
1/4 cup red bell pepper, finely chopped
1/2 cup grated carrots
1 Tbsp. olive oil
1/4 cup seasoned bread crumbs (if you are vegan, make sure it does not contain Parmesan cheese)
1/2 cup water
Mix all ingredients in a bowl, adding the water little by little until you have a sough (it must be too stiff nor too runny) and form small croquettes.
Cook in a skillet barely "painted" with olive oil, cook on both sides until they are golden brown on both sides.
Variation: Instead of grated carrots you can use the same amount of cornmeal.
