Millet Patties


These are very delicious and easy to make! Millet is a wonderful grain, very nutritious and because it does not have a strong flavor, it takes on seasonings very well, making some really scruptious meat substitutes!

1 cup millet, cooked to the consistency of rice
1 cup quick oats
1 1/2 cup whole wheat bread crumbs (you can make them by toasting your own bread and pulverizing it in the blender or food processor)
1/2 cup wheat germ
1 medium tomato, seeded and chopped
1 medium sized onion
Salt to taste
3 tbsp. sweet paprika powder
1/2 cup sweet red peppers, seeded and chopped
1/2 cup sweet green peppers, seeded and chopped
1 Tbsp. garlic powder
1/2 tsp. coriander powder
1/4 tsp. oregano
1/4 tsp. rosemary
4 Tbsp. cornstarch (as binder)

Put tomato, onion and peppers in blender with 1/2 cup water and blend till smooth. (make sure the blend is more like a paste and not at all runny!)
Scrape into a bowl and add all the other ingredients making a nice dough. Form the patties with your hands and cook them in a skillet barely "painted"
with olive oil till golden brown on both sides. Serve with your favorite sauce or gravy.
