Sweet "Ricotta"

Sometimes you just want something easy to spread on your toast and top it with jelly in the morning. This is just perfect! You can also use it to top fruit salads.

1 block tofu, drained and mashed with a fork
3/4 cup almonds
6 to 8 pitted dates
1/2 cup water or less
Pinch salt

Put all the ingredients in a blender, except tofu, adding water conservatively, only to insure the movement of the blender blades, and process till smooth. Scrape into bowl and mix the tofu in. Use as is.
If you would like your ricotta to be less sweet, add salt to taste and reduce the number of dates to just two.

Sweet Ricotta 2 (cooked)
1 block tofu, drained and mashed with a fork

1 1/2 Tbsp. cornstarch

Ricotta

1 block tofu, drained and mashed with a fork
3/4 cup almonds

1/2 cup soy milk
1 1/2 Tbsp. cornstarch
1 tsp. lemon juice (optional)

Mash tofu with a fork, mix in the rest of the ingredients. Cook over medium heat for about 10 minutes.

Savory Skillet Tofu

This is a relatively quick and very tasty way to prepare tofu. If you have never had tofu, try this recipe to see how you like it. You can use this savory tofu as an effective and tasty side dish for potatoes, rice, baked yams, etc. You can also stuff pita pockets with it or eat it, rolled up inside tortillas. It is very versatile. Use your imagination and you'll see how many ways you come up with on how to use this delicious recipe!

1 block of tofu, drained and sliced, then cubed
1/2 cup green and red bell peppers, cut in strips
1 red onion, peeled and sliced
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
1 tsp. turmeric
Salt to taste
1 tsp. coriander powder
3 Tbsp. olive oil
1 Plum or Roma tomato, seeded and chopped
1/2 cup water

Put all ingredients except tofu in a large skillet with the olive oil, saute veggies for 5 minutes, then add the tofu, cook over medium heat,
adding the water little by little, for about ten minutes, allowing the tofu to absorb the seasonings and to take on color. If you need to add a
little bit more water, add some till the tofu cooks for 10 minutes, having absorbed all the liquid. Try not to have a runny tofu!
Done!

You can serve it with lots of red and green peppers and onions, if you love them, or just plain as shown above.

Sauced Up Tofu

A lot of vegans don't like tofu because they don't like how it tastes. But tofu is just a sponge for flavor! You can make it taste like anything you want!
This is a very easy way of preparing it that will teach you its potential. It is a protein-rich, easy side dish that you can serve with just about anything from rice to baked yams, to potatoes!

1/2 block tofu
3 Tbsp. tomato sauce
Salt to taste
3/4 cup water
1/4 cup of green and red Bell peppers, chopped
1 Tbsp. sweet paprika powder
1/2 tsp. italian Seasoning
2 Tbsp. olive oil
1 tsp. onion powder or a small onion, sliced
1/2 tsp. garlic powder or 1 clove garlic mashed

Put all ingredients in a skillet and cook for about 10 minutes or until you have a nice sauce and the tofu has absorbed the seasonings.

Savory Potato Chunks

4 large potatoes, peeled and chunked
place in a bowl, add salt to taste
3 Tbsp. sweet paprika powder
1 Tbsp. garlic powder
2 Tbsp. onion powder
2 Tbsp. olive oil
you toss the potatoes in this, adding little by little 1/2 cup of water
Add all of this to a baking dish and bake at 400ยบ F for 1 hour.
Serve with a nice green salad and any side dish you like.

Tasty Scrambled Tofu with Olives
Take a block of tofu and put it in the freezer overnight. When brick hard, thaw it and squeeze all the water out, as much as you can. Break it up with a fork. Put it in a skillet with red and green peppers, garlic powder to taste, 1 small onion, sliced, 1 Roma tomato, chunked, 2 tbsp. olive oil, 1/2 tsp. Italian Seasoning or herbs of your choice, add as many olives as you want and cook it for about 15 minutes.
Makes a nice side dish for this or any dish!
