New Breaded Eggplant Croquettes

Eggplant lovers enjoy new ways of preparing this versatile vegetable which so easily adapts to new flavors and seasonings! These are easy to make and very tasty!

1 1/2 Tbsp. onion powder
1 Tbsp. sesame seeds toasted (toast in a skillet till golden brown to release flavor)
Salt to taste
2 Tbsp. sweet paprika powder
1/2 tsp. cardamom powder
1/2 tsp. coriander seed (pulverized with mortar and pestle for freshness)
1/2 tsp. ginger (powdered)
1/4 tsp. sweet basil crushed
3/4 cup all purpose flour

Optional: Prepared tomato sauce or gravy of your choice.


In a bowl, prepare batter by mixing all dry ingredients first, then adding 1 cup soy milk and incorporate it well, avoiding lumps.
Peel eggplant and cut it lengthwise, then cut it in small pieces. Heat up a skillet with a little bit of olive oil. Put eggplant in batter mixture then scoop out with a large spoon, drop into the skillet and extend them to the size you want them.
Let the batter set, then flip them to the other side. Cook on both sides till golden brown.

Yield: About 12 crockettes of a good size.

It is very tasty and easy to prepare.


To make it, you will need:













1 medium size eggplant, peeled and sliced

1/4 cup Anaheim peppers , seeded and chopped
2 sprigs parsley
1 large potato, peeled and cubed
1 Roma tomato, chopped

1 stalk celery, sliced

1/4 cup red Bell pepper, seeded and chopped

1 tsp. garlic powder
1 med. size red onion, peeled

Salt to taste
1/2 cup breadcrumbs

2 Tbsp. sweet paprika powder

1/4 cup Vital Gluten flour
1/2 cup all purpose flour

1/2 cup brown rice cooked
1/2 tsp. ground coriander

1/4 tsp. oregano powder











In a blender, put the eggplant, parsley, peppers, potato, tomato, celery, onion and brown rice with a little bit of water and blenderize till smooth. Scrape into a bowl. Add the other ingredients and mix well. Once you have a "dough", shape into "steaks" and cook in a skillet until golden brown on both sides.
Prepare your favorite tomato sauce and serve the steaks topped with it!

This recipe is almost like a tasty and easy quiche, so if you love those, you'll rave about this dish!
1 medium sized eggplant
2 medium size potatoes
1 1/2 cup whole wheat bread crumbs (make your own by toasting your bread and then pulverizing it in the blender or food processor)
1/2 cup Anaheim and red Bell pepper (combined, not 1/2 of each), chopped
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
Salt to taste
1/4 cup nuts (optional)
3 Tbsp. tomato sauce
2 Tbsp. olive oil
3 Tbsp. corn starch
1 medium size onion
1/2 tsp. each of coriander seed, ground, and of oregano, ground
1/2 cup of water

Peel off the eggplant and chop it in small pieces. In a blender, put the potatoes, the peppers and the onion with the water and process till smooth.
Scrape the mixture into a bowl. Add all the other ingredients, incorporating them well. Put the mixture into a greased pan or baking dish and bake it at 400º F for 15 minutes. Then lower the temperature to 350º F for 50 minutes or until well done.
Serve with a green salad of your choice. You can even add a side dish of baked yams or potatoes.
