Delicious Vegan Grain Patties or Burgers

These are delicious as is, or topped with a sauce or with sauteed onion rings and red and green peppers, as a side dish for potatoes,
baked yams or just as the filling for a hearty sandwich!

3 slices whole wheat bread
1 cup oats (quick)
1/2 cup wheat germ
1/4 cup cornmeal
1 cup whole wheat flour
1/4 cup sliced almonds (raw)
1 medium onion
1 tomato
2 Tbsp. cornstarch
Salt to taste
3 tbsp. sweet paprika powder
1 tsp. coriander, ground
1 tsp. cumin, ground
1/2 cup red and green sweet peppers strips
1/2 tsp. garlic powder
1 1/2 tbsp. olive oil
1 cup water

In a bowl, soak the bread in 1/2 cup water, adding the oats, until they are soft and mushy (but not runny.)
In a blender, process the almonds, the tomato, the onion, and the peppers with the rest of the water, until you have a paste.

Scrape into the same bowl where the bread and the oats are, incorporate the rest of the ingredients, blending well so that you will have a soft dough, not too wet, not too dry. Form patties when a large kitchen spoon and drop them into a skillet, barely "painted" with olive oil. Cook until golden brown on one side, (about 10 minutes), check to see if they are done, if not, leave them for 5 more minutes,
then, flip with a spatula, and cook on the other until golden brown.

Yield: Approx. 10 medium patties, less if you make large burgers

These burgers are delicious and very, very versatile!
Aside from the reicpe, I will also show you photos of two other ways to use these in other dishes!

2 cups brown rice already cooked (could be leftovers)
1 cup quick oats
1/2 cup sliced almonds or sunflower seeds
1/2 cup red and green sweet peppers, chopped
1 carrot, peeled and sliced
1 stalk celery, washed and sliced
1 medium size raw beet, peeled and cubed
1 large onion, peeled and chopped
1 potato, peeled and cubed
1 cup whole wheat bread crumbs (you can make your own by toasting whole wheat bread and pulverizing it in the blender or food processor) or 2 cups of whole wheat bread crumbled
1 cup tofu, drained and cubed
1 Tbsp. Italian Seasoning (or 1 tsp. rosemary, 1/2 tsp. oregano, 1/2 tsp. basil)
1 tsp. ground coriander
Salt to taste
2 Tbsp. olive oil
1 1/2 Tbsp. garlic powder
2 Tbsp. sweet paprika powder
3 Tbsp. nutritional yeast (not bakers yeast but a special flavoring and nutritional yeast you find in health food and specialty stores)
3 Tbsp. wheat germ
4 Tbsp. cornstarch
1 1/2 cup of water

In a food processor or blender, process onion, potato, carrot, beet, celery, peppers, almonds or sunflower seeds and tofu with a little water till smooth. Scrape into a bowl. In a separate bowl, mix all dry ingredients well and incorporate into the wet mixture. Combine thoroughly. Form Burgers or patties and cook in an electric skillet barely "painted" withg olive oil till golden brown on both sides.
You can start the skillet off by heating it up at 250º F, and then, when you add the burgers, raise the temperature to 300º F.

This is a recipe that yields! (16 good-sized burgers or patties!) So this is a good one if you like to make things and freeze them. Also, if you are expecting company or taking food to a gathering, this one is ideal.
I am including two other ways to prepare them. Once the burgers are made and cooked, you can cut them into strips and drop them into a skillet of scrambled tofu. Add them to a pot of spaghetti sauce and cook simply till flavors are blended. You will see the strips cooked in the sauce but not added to pasta but to potatoes! This is a wonderful side dish for rice, potatoes, baked yams, you name it!

You can Semi crumble or crumble these burgers into sauce for pasta or just to pour over baked sweet potatoes, baked squash or brown rice. It is quite tasty and easy!

Quinoa and Oats Burgers

These burgers are really delicious and well worth making in a large batch! You can freeze some of them and reheat for later use.
1 cup Old Fashioned oats
1 cup Quinoa, cooked according to package instructions
1 medium size potato
1 cup soy flour
3 slices of whole wheat bread
Salt to taste
1 onion
1/2 cup Anaheim peppers
1/2 cup red bell peppers
1 Tbsp. garlic powder
1 medium size beet
3 Tbsp. sweet paprika powder
3 Tbsp. nutritional yeast
1 1/2 cup Do-Pep (or gluten flour, sold in health food stores and vegan nutritional stores)
1/2 tsp. coriander, ground
1/2 tsp. sgae ground
1/2 tsp. oregano, ground
Put the oats and the bread in a bowl covered with water. Let them soak it till very soft. In the blender, put the potato, the onion, peppers and beet with very little water (about 1/4 cup) and process till smooth. Scrape unto a bowl. Add the now mixture of bread and oats and mix in all the rest of the ingredients. When you have them well combined, add the Do-Pep (always add it last).
Let the dough rest for about 20 minutes so that the Do-Pep can work on it (the purpuse is that the burgers will be firmer and not fall apart). Then, taking portions of the dough with your hands, form the burgers in the size you want and bake them in a non-aluminum, greased pan at 300º F until golden brown.
Serve them in a bun with trimmings, or covered withyour favorite sauce or gravy as a dish for rice, potatoes, yams, anything you like!

Sunflower Seed Burgers

1/2 cup unsalted sunflower seeds
1 1/2 cups canned or cooked chickpeas, drained
1 Tbsp. onion powder or 1/2 of a red onion, peeled and sliced
1/2 cup oats
1 tablespoon chopped fresh parsley
Salt to taste
1 Roma or Plum tomato cut in chunks
1 Tbsp. olive oil
1/4 cup whole wheat bread crumbs (toast your own bread and pulverize it in your blender or food processor)
1 tsp. sweet paprika powder
1/2 tsp. garlic powder
1 celery stick, sliced
1/4 tsp. sweet basil
About 1 cup of water

In a blender, put the tomato cut in chunks, the celery stick slices, the parsley, the onion, (if you are not using onion powder),
the sunflower seeds and the chickpeas, add only sufficient water to blend into a soft paste. Scrape into a bowl, add the rest of
the ingredients, mixing well to incorporate flavors. Put in the refrigerator, covered, for 30 minutes.
After that, form patties and cook in a skillet, turning when golden brown. Or bake on a cookie sheet at 350º F for 30 minutes or till golden brown, turning once.
Serve as is or with your favorite sauce or gravy. It yields 4 burgers or more, depending on the size you make them. You may use them with bread or as a side dish for potatoes or rice.
