Red Potato Croquettes

You don't have to be a vegan or vegetarian to enjoy it, it is really a great "filler" for

any meal that needs, well, something "extra." You'll love it, try it!


Red Potato Croquettes

4 medium red potatoes
1 cup tofu mashed
4 Tbsp. arrowroot or corn starch
1 tsp. garlic powder
1/2 cup red onion finely chopped
1 Tbsp. sweet paprika powder
1 tsp. turmeric
1/2 cup walnuts, ground
salt to taste
1/2 tsp. coriander powder
1/2 tsp. Italian Seasoning
1/2 tarragon
1 tsp. olive oil
1 cup corn flake cereal (brand of your choice)

In a blender or food processor, grind the corn flake cereal and put in a bowl,
mix in the salt, the garlic powder, the turmeric, Italian Seasoning. tarragon,
the paprika powder and the ground walnuts. Add the arrowroot or cornstarch and
make sure all its mixed thoroughly. Set aside.
Mash the tofu. Peel and mash the potatoes, add the tofu and mix well. Incorporate the
dry ingredients. Add the oil and blend well. Form croquettes of any size you like.
Place on a cookie sheet oiled with olive oil. Bake at 350ยบ F until golden brown, turning
once and cooking till golden brown on both sides.
This is a delicious side dish!
