These are absolutely delicious and very tasty. Easy to make and versatile as can be!
You can use them as a side dish or if you're making a quick lunch, just make them the center of the meal, add one of our
delicious sausage or meatballs recipes, a good raw salad and you've got a meal! The last time they were made at our home, they were accompanied by rice with vegetables and a green salad.

1 cup yellow cornmeal
2 Tbsp. unbleached flour
1 cup whole kernel corn from can or frozen (thawed)
1 Tbsp. olive oil
Salt to taste
2 Tbsp. soy flour
1/2 cup soy milk
1 Tbsp. anise seeds (vital for this recipe's delicious flavor, don't leave them out!)
Enough water to form a light dough

Put kernel corn with a little bit of water, process till smooth, scrape into a bowl, add the rest of the ingredients, mixing well till all is well combined. You must have a soft dough, not a batter, not a runny mixture. Grease a skillet with olive oil. Take large spoonfuls of the mixture and drop them in the hot skillet. Cook till golden on both sides.
