I was so fortunate in my timing when it came to photographing this pudding! I'm so glad i took the pick when it was still hot off the oven because shortly thereafter it was quickly eaten by the family. It is absolutely scrumptious so I don't blame them. It is also very easy to make.
4 ripe bananas
3/4 cup shredded coconut
1 cup crushed pineapple
1/4 cup raisins
1/2 tsp. salt
1/2 cup brown sugar
1 1/2 cup soy milk (plain or vanilla flavored)
1/4 cup sliced almonds
3/4 cup all purpose flour
Peel the bananas and slice them into a bowl. Peel the apple and seed it. Slice finely into the same bowl where the bananas are.
Add the rext of the ingredients, mixing well. Spoon into a baking dish and bake at 375º F for about 40 minutes. If after 40 min.
the top is not yet slightly brown, leave a bit longer, but keep checking it till it is golden brown.
You can serve it hot or cold, plain or with a scoop of your favorite vanilla ice cream on the side!
