When a person becomes a vegan or when the doctor says "No more butter or margarine" because of high cholesterol, finding something tasty and pleasant to spread on your toast or to spread on your bread when you are making sandwiches is quite a task! There are many spread recipes, but not all of them are tasy, this one is! And it is tremendously easy to make.

Carrot Spread or Butter Substitute
1 carrot boiled
1/2 cup tofu
1/4 cup raw cashews
1 tsp. cornstarch
1 Tbsp. olive oil
Salt to taste
2 Tbsp. soy milk, plain

Put all ingredients in the blender, except the oil, and process with the soy milk until smooth. Scrape into a small pot and cook, stirring, for around 10 minutes or until it thickens.
Spread on toast.

I love this butter substitute! I buy vegan margarine (mainly because the rest of the family complain if I don't - I would happily go without!) but I don't like highly processed foods like margarine. This substitute is so much healthier! Got to try this :D
