Scrumptious Wheat Germ Patties

1 cup potato flakes
3/4 cups quick oats
1/2 cup wheat germ
1 medium size red onion, peeled and coarsely chopped
1/4 cup all purpose flour
1 tsp. garlic powder
1 tsp. coriander, ground
1 tsp. Italian Seasoning (or sweet basil and Italian herbs of your choice)
Salt to taste
1-1/2 Tbsp. sweet paprika powder
2 Tbsp. olive oil
1/2 cup bread crumbs (you can make your own if you want to using your own bread, toasting it and crumbling it in the blender or food processor)
1/4 cup gluten flour
1/4 cup nuts
3/4 cup water

Put the onion and the nuts in the blender with a little bit of the water and puree them. Scrape into a bowl. Add all the rest of the ingredients and form a soft dough (not runny but not stiff), if you need to add a little bit of more water, do.Let rest about 15 minutes so that the gluten flour will do its work.
Form patties (a little thick) and flatten them, still leaving them a bit thick so that they will not harden while cooking.Cook them in a skillet until golden brown on both sides.

1 potato

2 Tbsp. sweet paprika powder
1/4 cup water
1 Tbsp. olive oil
3 cloves fresh garlic
1 carrot grated (raw)

Put in the blender the onion, garlic, potato, Roma tomato, the nuts and the water and blend till smooth.
Scrape into a bowl. Add the rest of the ingredients and incorporate. Form patties.
Bake for 30 minutes at 350º F or till golden brown, turning once.

Serve as is or topped with your favorite sauce or gravy.

This soup is absoltely delicious. You can serve it with some brown rice on the side or put some in the soup right before yo serve it.
1 Roma tomato, processed in the blender or 1/8 cup crushed tomato

1 tablespoon olive oil

1 onion, chopped or 1 tsp. onion powder

1 bay leaf

3 cloves garlic, mashed or 1/2 tsp. garlic powder

1 1/2 cups dried split peas

Salt to taste
1 Tbsp. sweet paprika powder

1/4 cup Anaheim pepper, seeded and sliced

7 1/2 cups water

2 carrots, peeled and chopped

2 stalks celery, chopped

3 potatoes, peeled and chopped

1 tsp. chopped fresh parsley

1/2 teaspoon dried sweet basil

Optional: 1/2 cup peeled and diced Butterneck squash

In a pot, put the water and the peas. Bring to a boil, then reduce the heat to low. Simmer for 1 hour, stirring every now and then. Add potatoes and the rest of the ingredients and simmer until the peas and the vegetables are tender.

There are many spread recipes, but not all of them are tasy, this one is! And it is tremendously easy to make.

Carrot Spread or Butter Substitute
1 carrot boiled
1/2 cup tofu
1/4 cup raw cashews
1 tsp. cornstarch
1 Tbsp. olive oil
Salt to taste
2 Tbsp. soy milk, plain

Put all ingredients in the blender, except the oil, and process with the soy milk until smooth. Scrape into a small pot and cook, stirring, for around 10 minutes or until it thickens.
Spread on toast.

Here's a small collection of easy to make and very tasty breaded egglant recipes.
Whether you use it as an entree, a side dish or as part of a main course, nothing can beat an easy breaded eggplant recipe.
Savory and Easy Breaded Eggplant Rounds
1 large eggplant, washed and sliced
1/2 cup soy flour
2 Tbsp. cornmeal
2 Tbsp. cornstarch
1 Tbsp. sweet paprika
1/2 tsp. garlic powder
2 Tbsp. onion powder
Salt to taste
1/2 tsp. Italian Seasoning
1/2 tsp. Coriander powder
Sufficient water to make a batter
Your favorite spaghetti-style tomato sauce
Wash eggpant, slice with skin 1/2 inch thick
and set aside.
In a bowl, mix all the other ingredients into a batter.
Proceed as follows:
Spread the batter on top of each round and turn it carefully
onto a cookie sheet, without not spilling it. Cover the other
side and bake at 300º F 15 mins, then turn. Or bake on
one side until golden brown and then turn and do the
other side.
In these recipesthe skins were left on for firmness, but you can peel them if you
want to.
How to Make Delicious Breaded Eggplant Slices with Hazelnuts and Garlic
1 large eggplant, sliced into 1/2 inch thick rounds
1 tbsp olive oil
1/2 cup water
4 slices whole wheat bread
1/8 cup dry-roasted hazelnuts, pulverized in blender
1 tsp. sweet basil, crushed
1/2 tsp. sweet paprika powder
1/4 tsp. to 1/2 tsp. dried rosemary, crushed (if you love rosemary use 1/2 tsp.)
1/2 tsp. finely grated lemon rind
This recipe is as easy and as tasty as they come!If you cannot find dry-roasted hazelnuts. Get raw hazelnuts and roast them in the oven or in a skillet (but watch them so they won't burn) to get out of them that rich and mellow hazelnut flavor! Once that is done, set aside to cool. Once they are cool, pulverize them in a blender or food processor.Toast your bread, and pulverize it in the blender. In a mortar, crush your peeled garlic cloves.Peel your eggplants into 1/2 inch rounds and set them aside.
Step2In a bowl, mix all the ingredients, save the eggplant and the Spaghetti sauce, adding water, little by little until you have a good thick batter, about the consistency of pancake batter.
Step3Use some olive oil to grease a cookie sheet. Dip your eggplants in the batter and turn so that both sides are coated, place each round in the cookie sheet. Bake at 350º F until they are golden brown (about 30 minutes.) Right when they are just about done, heat up your Spaghetti sauce and have it ready. Breaded Sliced Eggplant
1 small eggplant

Salt to taste

Proceed as in previous recipes.
Breaded Eggplant Pomodoro
1 Anaheim pepper, seeded and chopped1 onion, chopped
2 tbsp. tomato puree
1/4 cup vegetable broth or water
1/2 tsp. garlic powder
1 tsp. oregano
2 tsp. sweet basil
1 tsp. tarragon
1/2 cup soy flour
2 Tbsp. cornmeal
Pinch of brown sugar (optional)
2 tomatoes, sliced thin
1 medium eggplant sliced 1/4 inch thick
In blender, blend the first 3 ingredients. Pour this mixture into a bowl. Mix thoroughly, add the rest of the seasonings, then arrange the eggplant slices on a cookie sheet and with a spoon, cover the top of each round with the mixture, then flip over. Cover the other side of the rounds with 1 slice of tomato and then with the batter.Bake at 300º F for 15 minutes then turn over and bake until golden brown on the other side.
Any of these recipes can be served as is or topped with your favorite spaghtetti-style tomato sauce.

Here's another easy and economical recipe which is also nutritious and full of yum!

1 cup shredded carrots
1 cup tofu, mashed
1 Tbsp. onion powder
Salt to taste
1/4 cup walnuts
1/4 tsp. garlic powder
2 Tbsp. cornstarch
1/4 tsp. Italian Seasoning
1 Tbsp. water
1 tsp. olive oil

Mix all ingredients, make patties and bake at 325º F for 15 minutes.
Turn, and bake on the other side till golden brown.
Yield is 6 patties but the recipe can be easily doubled.
Serve as a side dish or use for sandwiches.

Gluten-FREE Breaded Eggplant Rounds

1 large eggplant, sliced in 1-inch thick slices
Put some salty water in a bowl, then dunk the slices in the water and drain them and dry them iwth a paper towel, putting them in a plate.
Prepare your Breading mixture as follows:
In a bowl, mix
1/2 cup soy flour
1/2 cup cornmeal
1/4 cup tapioca flour
2 Tbsp. onion powder
1/2 tsp. garlic powder
Salt to taste
1/2 tsp. Italian Seasoning (pulverized)
1 Tbsp. sweet paprika powder
1 Tbsp. olive oil
Water (start with 1/2 cup of water, adding little by little until you have the consistency of a pancake batter). Set aside.
Grease up a c ookie sheet with a little bit of olive oil. Then take one slice of eggplant at a time and with a spoon, taking some of the
batter, coat one side of the eggplant round, letting the batter drop on top of it, Carefully place on the greased cookie sheet, with the
side has not been coated in batter facing up and the side covered with batter facing down. Coat the top side in batter as it lies on the
cookie sheet. Repeat with all the rounds.
Bake at 300º F for around 15 minutes, check on it and if the bottom is already golden brown, turn it over and cook on the other side.

These are really delicious and it cannot get easier than this! It is also a GLUTEN FREE recipe.
1 1/2 cup brown rice, cooked
1/2 cup millet flour
1/2 cup soy flour
1/4 cup walnut pieces
Salt to taste
1/2 tsp. turmeric
1 Tbsp. sweet paprika powder
1/2 tsp. garlic powder
Half an onion (medium) coarsely chopped
1/2 tsp. Italian Seasoning (this herb blend contains sweet basil, oregano, and other herbs, or use herbs of your choice)
1 Tbsp. olive oil
In a blender, process the brown rice, the walnuts and the onion till smooth.
Scrape into a bowl and add the rest of the ingredients, blending well.
Form patties, we did really flat ones, which cooked nicely but you can make them as you want to.
Place them on a cookie sheet greased with a little bit of olive oil and bake at 350º F until golden brown, turning once and browning on both sides.
Serve as is or with a sauce or gravy of your choice.

Every time that we post a recipe we try to make it versatile, easy and scrumptious as well as economical. This one fits all of those requisites perfectly! It can be prepared in so many ways it is almost a hundred recipes in one. We will show you what we mean with a few pictures.
Delicious Garbanzo Meats
A really scrumptious, economical and easy to make meat substitute!
1 1/2 cups cooked garbanzos
1/2 cup oats
1 medium-sized potato, raw
1 cup breadcrumbs
1/2 cup all-purpose flour
3/4 cup Do-Pep or gluten flour
2 Tbsp. sweet paprika powder
3 Tbsp. sesame seeds
Salt to taste
1 medium-sized onion, peeled and carsely chopped
1 tsp. garlic powder
1 tsp. Italian Seasoning or herbs of your choice that contain sweet basil
1 tsp. coriander powder
1 Tbsp. olive oil

Put in a blender the garbanzos, onion, potato with 1/2 cup water and process till smooth. Scrape into a bowl and add the rest of the ingredients,
leaving the Do-Pep for last. Mix very well until you have a dough with the consistency of bread dough. Shouldn't be too dry nor too wet.
Cover and let dough rest for about 15 minutes, so that the Do-Pep will really congeal the dough.
Take pieces and form balls and bake them at 350º F until golden brown. After that, you could serve them as is or with a sauce of your choice.
As you can see by the pictures, this same recipe can be used in different ways after it has ben cooked, you can for example, cump it like meatballs into your spaghetti or pomodoro pesto sauce and serve it with any pasta. You can serve it with rice or potatoes, baked yams or sweet potatoes topped with sauce or gravy as a side dish. You can oven-fry or olive-oil skillet fry them as little sausages. It can also be made into patties and used for sandwiches or pitas.

More Vegan Sausages These are REALLY GOOD!




Savory Vegan Sausages

1 1/2 cup quick oats
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
Salt to taste
1 cup breadcrumbs (you can make your own breadcrumbs by toasting your whole wheat bread and then pulverizing it in a blender or food processor, you can season them a bit if you like)
1 medium potato, raw, peeled
1/2 tsp. thyme
1/4 cup peppers (Anaheim are best, but if you don't have htem, Bell peppers)
1 medium size red onion
173 cup soy flour
1/2 cup sunflower seeds
1 cup water
1/3 cup vital gluten
1 Tbsp. olive oil

Peel your potato. In a blender, put the potato, the onion, and the sunflower seeds with less than 1 cup of water. Process till smooth and scrape into a bowl. Set aside.
Mix the quick oats with the vital gluten and all the dry seasonings. Then incorporate this dry mixture into the wet mixture, slowly adding the rest of the water, until you
have a dough. Take portions of that dough with your hands and roll them into sausage shape. Bake them at 400º F for 15 minutes, then lower the temperature to 350º F, turning them around, till they are golden brown on every side.
If you have the time, steam them, that will make them moist and chewy.

I know there are people who like to fry. i do not encourage frying since there are cardiovascular dangers associated with it.
That is the reason why I sugest steaming or baking.

Yield: Approximately 16 sausages.
You can make these and freeze them for using in many dishes.
If you want to use them in beans, stews and soups, you must use more vital gluten so that your sausages won't fall apart int he boiling liquid as it coooks. You can also scramble them with tofu, both whole and in slices,
add them to pasta, rice, potatoes cooked in tomato sauce, and many other dishes.

Variations:

1. Fried Sausages. If you absolutely must fry these sausages, fry them in olive oil, which is the healthier alternative. The following photo shows the sausages fried.










2. Savory Vegan Sausages with Tofu in Tomato Sauce:
First, cook your sausages following the recipe given above (you can bake them, steam or fry them). After you have cooked them, put in a small pot 1 cup of your favorite prepared tomato pasta sauce, heat it up and add sausage slices and 1 cup of tofu chunks. Cook till the sausage slices are moist and the tofu has absorbed the sauce. About 10 minutes at slow heat (if it boils, the tofu will just break apart). It is delicious as a side dish, especially for a breakfast or for a quick lunch. You can also use less sauce and prepare these for pita pockets or tortilla wraps (too much sauce will make them drip and mess up your pitas or wraps).
3. Sausage Chunks: You simply make your sausage dough, grab the dough by thick pieces, forming odd chunks with your hands and cook as before. These were then simmered for a few minutes in a spaghetti-style tomato sauce. They are delicious with potatoes, yams, baked squash, sweet potatoes and even rice! See how they look below.










4. Savory Sausages in Tomato Sauce: Finally, you can simmer them a bit in your favorite tomato pasta sauce and of course add them to your pasta or just use them as a side dish for baked potatoes or whatever you are having.

Mix all together with enough water to form a batter that is not too thick. Pour enough of the mixture over each one of the eggplant roundsand place them in a greased cookie sheet. Bake at 400º F for 10 minutes, and check to see if they are golden brown. Turn them around and lower the temperature to 300º F and bake until they are golden brown on that side also. A great and easy side dish!
Delicious Tofu in Tomato Sauce and Almond Milk
1 block of tofu, drained in a colander2 Roma tomatoes, chopped in pieces1/2 cup sweet green peppers, sliced1/4 cup sweet red peppers, sliced1/2 cup raw almonds (do not have to be blanched)1 medium onion, peeled and chopped2 Tbs. sweet paprika powder1 Tsp. garlic powderSalt to taste1/2 Tsp. Ita lian Seasoning or herbs of your choice3 Tbsp. olive oil1/2 cup tomato sauce2 cups of water
In a blnder, put the almonds and the water and process them into a milk.Set aside. In a skillet, put all the ingredients, except the tofu and the almond milk. Stir them up with a little water for 3 minutes. Slice the tofu and add it and after that, add the almond milk and cook for 10 minutes, stirrring occassionally.A very easy and useful side dish. Goes well with almost anything!

Spanish Okra
1/2 pack frozen okra, thawed
1 small onion
1/2 Bell red pepper cut in strips
1 Roma tomato, chopped
1/4 tsp. oregano (powdered)
1/8 tsp. Italian Seasoning or just basil
salt to taste
2 cloves garlic, crushed
2 tablespoons olive oil
1 tsp. sweet paprika powder
After your okra has thawed, place it in a deep skillet together with the olive oil, the onions, the garlic and the pepper. Sautee the vegetables a bit, adding a little water at a time, for a couple of minutes. Then add the rest of the ingredients and a little more water,and let it all cook till tender. A very nice and easy side dish.
Vegetable Rice
1 cup cooked rice
1 large carrot, peeled and chopped
1/2 cup chopped celery
1/2 cup Butternut squash, peeled and cubed
1/2 cup frozen sweet peas, thawed
1 Roma tomato, in chunks
salt to taste
1 medium sized onion sliced peeled and halved
1/2 tsp. powdered or granulated garlic
1 tsp. paprika
1 tablespoon red Bell pepper, chopped
1 tablespoon green Bell pepper,chopped
1 cup frozen broccoli or cauliflower flowerettes, thawed
1/2 cup shredded white cabbage
2 tablespoons olive oil
1/2 tsp. Italian Seasoning
Put 2 tablespoons olive oil in a deep skillet and sautee the vegetables,(except the peas) for a few minutes. Add the other seasonings. Continue cooking, adding water little by little until tender. Add the rice and mix well. Leave for a few minutes, adding a little water, if necessary. let it cook until the vegetables are done and the flavors are blended. Add the peas and mix into the rice. Serve.
If you are able to get a Vegan Parmesan Cheese at your local health food store or supermarket, sprinkle the cheese on top as you serve the rice.
Add pimento-stuffed green olives to decorate.
Breaded Zucchini Slices
1 pound zucchini squash cut into 1/2-inch slices
salt to taste
Breading mix
Bread crumbs (you can make them by toasting whole wheat bread and pulverizing it in the blender together with 1 tablespoon raw sesame or sunflower seeds) and 1/8 tsp. celery seeds (optional).To 1 cup prepared bread crumbs add 1/2 tablespoon Italian Seasoning1 tablespoon onion powder 1/2 tsp. garlic powder (if you love garlic, you can add 1 tsp.)1 tablespoon arrowroot powder or 2 tablespoons whole wheat flour,1/2 cup tofu mashed in the blender with a little water to a creamy consistency.
Mix all ingredients, including tofu, adding water till you have the consistency of a pancake batter (be careful not to get it too runny!) Spray a pan or oil it with olive oil. Dip your zucchini slices in the batterand put them in the oven at 350° until they are golden.
