Soy Potato Burgers

These are absolutely delicious and easy to make!

1 cup soy flour
2 medium sized potatoes
1 cup whole wheat bread crumbs (make your own by toasting your bread and then pulverizing it in the blender or food processor)
1 medium size red onion
1/4 cup nuts
Salt to taste
2 Tbsp. nutritional yeast (not Brewer's yeast, you can get this kind of yeast at health food stores)
2 Tbsp. sweet paprika powder
1 tsp. garlic powder
1 tsp. ground coriander
1/4 tsp. oregano powder
1/4 tsp. ground sage
2 Tbsp. olive oil
1/2 cup Do-Pep
1/2 cup water

Make your bread crumbs and set aside. Put in the blender the potatoes, the onion and the nuts with half of the water. Process till smooth.
Scrape onto a bowl. Add the rest of the ingredients, mixing well. Let the mixture rest for 20 minutes, till the Do-Pep has worked in the dough.
Then, form the burgers with your hands of whatever size you want them, and bake them in a greased pan at 300º F for 30 minutes, or until golden brown, flipping them over every 15 minutes.

Well, here's another way to use those balls, you mash them a bit and add them to a skillet of scrambled tofu. Add bread or any cooked vegetable like yams, for example and you've got a quick meal. Here's what it looks like:

Scrumptious Millet Balls

These are really delicious!
2 cups millet, cooked
1 cup whole wheat bread crumbs (you can make your own by toasting bread and then pulverizing it in the blender)
1 cup soy flour ground
1/2 tsp. coriander seed, ground (if you cannot find it ground, you can mash it in a mortar or pulverize it in the blender)
Salt to taste
2 Tbsp. sweet paprika powder
1/4 cup water

Mix the first 4 ingredients, adding water to make a dough-likie mixture. When well mixed, add the rest of the ingreidnets and mix thoroughly. Set aside and let the dough rest for at least 30 minutes so that the Do-Pep can act upon the dough so that the balls won't fall apart on you.
Form the balls about the size of a Tbsp and bake them at 400º F until well cooked. About 1/2 an hour, turning them over every 10 minutes and not letting them burn. Serve with your favorite tomato sauce.

1 1/2 tsp. garlic powder

1 tsp. Italian Seasoning

You can use these balls as a side dish for just about anything! We had ours with brown rice and lentils and a green salad. You can have yours with anything you like, even pasta. If you use them for pasta, do not cook them with the pasta but add them to it after you have served the pasta. And try to let the dough rest a little longer, so that the balls will be sturdier.

These are very simple to make, economical, nutritious and ho so very tasty!
2 cups red or pinto beans, cooked or leftover
1 cup bread crumbs (you can make your own by toasting bread and then pulverizing it in the blender or food processor)
1 1/2 cups soy flour
1 Roma tomato
2 Tbsp. tomato sauce
1 Tbsp. garlic powder
3 Tbsp. onion powder
2 Tbsp. olive oil
Salt to taste
1/2 tsp. sweet basil powder
1 tsp. coriander seed ground
1/2 tsp. Italian Seasoning
4 Tbsp. water

Put the tomato in the blender with a tiny bit of water and turn it into a puree. Scrape it into a bowl. Mash well the beans and mix them with the tomato puree and add the bread crumbs. Mix thoroughly. Add all the other ingredients and form into patties. Bake them at 300º F till well done.
Serve with sauce, gravy or as is. The can be put in a bun with trimmings also.

Super Easy Breaded Eggplant

1 large eggplant, cut into 1/4 inch thick slices (if you want them thicker, cut them into 1/2 inche rounds)
1 tbsp olive oil
1/2 cup water
4 slices whole wheat bread
1/4 cup cornmeal
1 tsp. sweet basil, crushed
Salt to taste
1 tsp. onion powder
1 tsp. garlic powder

2 Tbsp. crushed tomatoes
1/2 tsp. sweet paprika powder
1/4 tsp grated lemon zest
1/4 tsp. to 1/2 tsp. dried rosemary, crushed (if you love rosemary use 1/2 tsp.)
1/2 tsp. finely grated lemon rind


This recipe is as easy and as tasty as they come!
Peel your eggplants into 1/2 inch rounds and set them aside.
In a bowl, mix all the ingredients, save the eggplant, adding water, little by little until you have a good thick batter, about the consistency of pancake batter.
Use some olive oil to grease a cookie sheet. Dip your eggplants in the batter and turn so that both sides are coated, place each round in the cookie sheet. Bake at 350º F until they are golden brown (about 30 minutes.) Right when they are just about done, heat up your Spaghetti sauce and have it ready. Serve your eggplant rounds topped with the sauce.
Serve with your favorite sauce or as is.
Great as a side dish for potatoes or baked yams!
