1 cup cracked wheat, cooked
1 cup quick oats
1 cup brown rice, cooked
3 slices of whole wheat bread, crusts taken out and cut in tiny pieces
1 Roma tomato, chooped
1 medium red onion, peeled and chopped
1/2 cup Anaheim peppers, chopped
1/2 cup red Bell Peppers, chopped
1 medium size potato, peeled and chopped
1 celery stalk chopped
1 carrot, peeled, sliced
1 small raw beet, peeled and sliced
2 Tbsp. sweet paprika powder
1 Tbsp. garlic powder
1 tsp. coriander seed, ground
1 tsp. Italian Seasoning
1/4 cup gluten flour
2 Tbsp. olive oil
Salt to taste
In a blender, process celery, beet, carrot, tomato, onion, peppers and potato with a very little amount of water till smooth. Scrape into a bowl. Mix in all the rest of the ingredients until you have a soft dough.Form burgers with your hands and cook in a skillet barely "painted" with olive oil until golden brown on both sides.
Note: If you are allergic to glute flour, substitute it for 2 Tbsp. cornstarch so that your burgers willnot fall apart as you cook them.

1 Tbsp. sweet paprika powder

1 Tbsp. onion powder1 tsp. garlic powder

1/4 tsp. sweet basil, crushed




1/8 tsp. oregano, crushed

Salt to taste

1/4 cup red bell pepper, finely chopped

1/2 cup grated raw potato

2 Tbsp. tomato puree

1/2 tsp. brown sugar

2 Tbsp. wheat germ

1 Tbsp. olive oil1/2 cup water





Mix all ingredients in a bowl, adding the water little by little until you have a sough (it must be too stiff nor too runny) and form small croquettes.Cook in a skillet barely "painted" with olive oil, cook on both sides until they are golden brown on both sides.

You can serve these with anything you like or use for burger buns.

Seasoned Croquettes

Sometimes youneed a quick tasty side dish to add to that almost spur-of-the-moment meal or just something to add to an old and favorite recipe. Well, here's something you can use!
1 cup cracked wheat cooked following package instructions (to the point of being soft like rice)
1/2 cup potato flakes
1/2 cup all-purpose flour
1 Tbsp. sweet paprika powder (you can use smoked paprika powder if you like)

1 Tbsp. onion powder
1 tsp. garlic powder
Salt to taste
1/4 cup red bell pepper, finely chopped
1/2 cup grated carrots
1 Tbsp. olive oil
1/4 cup seasoned bread crumbs (if you are vegan, make sure it does not contain Parmesan cheese)
1/2 cup water

Mix all ingredients in a bowl, adding the water little by little until you have a sough (it must be too stiff nor too runny) and form small croquettes.
Cook in a skillet barely "painted" with olive oil, cook on both sides until they are golden brown on both sides.
Variation: Instead of grated carrots you can use the same amount of cornmeal.

Brown Rice with Vegetables and Mushrooms

4 cups brown rice cooked
1 cup cut green beans
1 1/2 cup shredded cabbage
Optional 2 cups broccoli florets
1 cup frozen corn, thawed
2 large carrots, peeled and sliced
1 cup frozen peas, thawed
1 stalk celery, chopped
2 Roma tomatoes, chopped
2 1/2 cups Crimini mushrooms (not Button)
1 cup sweet green and red peppers, seeded and diced
1/4 cup olive oil
Salt to taste
2 1/2 Tbsp. sweet paprika powder
1 Tbsp. garlic powder
2 Tbsp. onion powder
1/2 tsp. Italian Seasoning
1 tsp. turmeric powder

In a large skillet, put the tomatoes, the paprika, garlic powder, onion powder, herbs, salt, the mushrooms and the oil,
leave to cook a bit with a little bit of water, till the mushrooms are soft (about ten minutes). Add the cabbage, and cook it, stirring, for some minutes.
In a separate pan, cook slowly for no more than 6 or 7 minutes the green beans,the corn, and the carrots in a little bit of water. Cook until tender-crisp. When the veggies are done,
drain (do not discard the water) and add to the skillet where the mushrooms are. Add the broccoli, the peas and the celery. Cook for about 5 minutes, then add the rice and the seasonings, mixing well.
If the mixture is a bit too dry, add some of the water where the carrots, green beans and corn cooked. Add water to taste, let all heat through for about 5 to 6 minutes. Make sure that it doesn't come
out too dry nor too soggy. Add an extra Tbsp. olive oil if needed to make it moist.
Serve,
If you want to, you can add some olives before serving or cooked asparagus spears.

You may have seen them at well-stocked supermarkets, things that look like over-grown bananas. They are called plantains and they can make some of the most wonderful, and exotic (yet easiest) recipes you can make!


If you don't see them at your local supermarket, try either a Filipino or a Latino market, usually you will find them there.


There are some good tips to buy them:


1. NEVER buy a plantain whose skin is black!


2. NEVER buy a plantian that has white blotches on it (fungus)


3. It is okay if the yellow skin has black spots, so long as the plantain is firm and looks healthy.


Here's a wonderful but very easy recipe for a delicious plantain dessert:


Orangey Tropical Dessert

2 large ripe plantains, peeled (to peel them, cut both ends off, run a knife all the way down --not too deep into the peel--and begin to lift the peel, chet your fingers under it and begin to pull it off, if the plantain is ripe, it will come off easily.)

1/2 tsp. vanilla

2 Tbsp. all fruit orange jelly

A little bit of water (if needed)

Preheat the oven to 350ยบ F.

If the jelly is too thick, you will have to put it in a blender with a little bit or water to make it easier to apply (try to get one that will not be so thick that it won't "run" over something).

Place your peeled plantains in a greased bake dish or greased baking pan. Make diagonal slashes on them with a knife to speed up baking (but do not cut all the way through!)

In a small bowl, mix the vanilla and the jelly, with a spatula or a kitchen brush apply the jelly-vanilla mixture in a "painting" motion, covering all the plantains thoroughly.

Put in the oven and bake for about 30 mintutes until they are golden (watch them occasionally so they won't burn!)

Variations:

Coconut Ambrosia

You can prepare the recipe as above and once you are ready to bake them, sprinkle powdered
coconut over the jellied plantains.

Hidden Treassure

Make the diagonal slashes deeper and stick some raisins in there, then, close as much as you can and "paint" the jelly on. Use pineapple if you can!
