Tasty Eggplant Croquettes

1 eggplant
1/4 cup walnuts
1 cup brown rice, cooked
1 medium-size potato
1/ 4 cup Anaheim peppers, sliced
1/2 cup red Bell peppers, sliced
1 medium red onion, peeled and sliced
1 tsp. garlic powder
3/4 cup soy flour
Salt to taste
1/4 tsp. sage powder
1/4 tsp. rosemary powder
1 tsp. coriander seed ground
1/4 tsp. tarragon gound
3 tbsp. arrowroot or cronstarch
3 tbsp. sweet paprika powder
1/4 cup water

In the blender put all the ingredients except the flour and the arrowroot or cornstarch.
Scrape into a bowl. Mix in the flour and the arrowroot or cornstarch (taking care that the mixture will not turn lumpy!)
form the croquettes. Bake at 300ยบ F in a cookie sheet, turn after 10 minutes baking, watch them, so that they will nor brown too much.
When golden brown on both sides, they're done!
