1 cup potato flakes
3/4 cups quick oats
1/2 cup wheat germ
1 medium size red onion, peeled and coarsely chopped
1/4 cup all purpose flour
1 tsp. garlic powder
1 tsp. coriander, ground
1 tsp. Italian Seasoning (or sweet basil and Italian herbs of your choice)
Salt to taste
1-1/2 Tbsp. sweet paprika powder
2 Tbsp. olive oil
1/2 cup bread crumbs (you can make your own if you want to using your own bread, toasting it and crumbling it in the blender or food processor)
1/4 cup gluten flour
1/4 cup nuts
3/4 cup water

Put the onion and the nuts in the blender with a little bit of the water and puree them. Scrape into a bowl. Add all the rest of the ingredients and form a soft dough (not runny but not stiff), if you need to add a little bit of more water, do.Let rest about 15 minutes so that the gluten flour will do its work.
Form patties (a little thick) and flatten them, still leaving them a bit thick so that they will not harden while cooking.Cook them in a skillet until golden brown on both sides.

Eggplant "Steaks"

If you love eggplant and enjoy savory cooking, this recipe is for you!

It is very tasty and easy to prepare.


To make it, you will need:













1 medium size eggplant, peeled and sliced

1/4 cup Anaheim peppers , seeded and chopped
2 sprigs parsley
1 large potato, peeled and cubed
1 Roma tomato, chopped

1 stalk celery, sliced

1/4 cup red Bell pepper, seeded and chopped

1 tsp. garlic powder
1 med. size red onion, peeled

Salt to taste
1/2 cup breadcrumbs

2 Tbsp. sweet paprika powder

1/4 cup Vital Gluten flour
1/2 cup all purpose flour

1/2 cup brown rice cooked
1/2 tsp. ground coriander

1/4 tsp. oregano powder











In a blender, put the eggplant, parsley, peppers, potato, tomato, celery, onion and brown rice with a little bit of water and blenderize till smooth. Scrape into a bowl. Add the other ingredients and mix well. Once you have a "dough", shape into "steaks" and cook in a skillet until golden brown on both sides.
Prepare your favorite tomato sauce and serve the steaks topped with it!

Potato 'N More Pie

This pie is very smooth and it goes well with any or our meatless "meat" or sausage recipes. You can make it plain as we have done or put layer of sliced sausages or of vegan cheese or even veggies with sauce in the middle of it. It is quite versatile and really good.

1 cup brown rice cooked
3 large potatoes, raw, peeled
1 cup frozen corn
1/3 block tofu, drained
3 Tbsp. extra virgin olive oil
Salt to taste
1 Tbsp. onion powder
1 tsp. garlic powder
1/2 cup all purpose flour
1 cup water

In blender put the raw pottoes,the corn and the rice and process with about 1/2 cup water or more as needed and the tofu, until you have a smooth mush. Scrape out of blender into a bowl and mix in the other ingredients and incorporate well.
Bake for 1 hour at 350º F or until golden brown.

Meatless "Meat" Deliciosa

This easy to make meat substitute is very tasty and it goes wonderfully with anything, but especially with pasta dishes. I've chose to show it to you with brown rice spaghetti and sauce, but you can add it to any recipe you like.
1 cup of soy flour
1 large potato or 2 medium size potatoes
4 slices of whole wheat bread (in crumbs)
1/4 cup fresh parsley, finely chopped
2 stalks celery, sliced
1/2 raw beet, peeled and sliced
1/2 cup Anaheim and sweet red peppers, chopped
1 medium size onion
2 Tbsp. sweet paprika powder
Salt to taste
1/4 cup olive oil
1 1/2 Tbsp. garlic powder
3/4 cup Vital Wheat Gluten flour (from a health food store or a specialty store)
1 cup brown rice, cooked
1/2 cup walnut pieces
1 tsp. sweet dried basil
Cook the rice until done. Let cool. Peel the onion and corasely chop it. Chop the peppers. Peel the beet and slice it. Slice the celery. Mince the parsley. Put in the blender or food processor the onion, the beet, celery stalk and process with a little water till smooth.
Scrape into a bowl, add all the other ingredients, except the olive oil. Combine well until you have a soft dough. In a skillet, put the olive oil, heat it to 300º F and put the "meat" to cook in it. As the "meat" cooks, break it apart with a fork into crumbles and continue to cook it and move it around until it is golden brown but not tough. Approximately 40 minutes.

If you are going to use it with pasta, prepare your "meat" ahead of time. Prepare your favorite pasta sauce. When both are ready, prepare your pasta. When you are ready to serve and have already added the sauce to the pasta, top with the meatless "meat" and top with more sauce.
