Yummy Lentil Nuggets a la Salsa

This is the same recipe we made before but prepared in a different way, which will produce an entirely different texture and flavor.

To the Basic Recipe:
1/2 cup all pupose flour
1/2 cup soy flour
2 cups cooked lentils, well drained
1 medium size potato, peeled and cubed
1 medium tomato, chunked
1 medium size onion, peeled and sliced
1/2 cup sweet red and green peppers
1 tsp. garlic powder
1 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
1/4 tsp. marjoram
1/4 gluten flour
1/2 cup water

Add the following:
1 cup all purpose
1/2 gluten flour
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. Marjoram

In a blender with the 1/2 cup water, process the potato, peppers, tomato, onion and lentils till smooth.
Scrape onto a bowl, add the rest of the ingredients. Cover and let rest for a few minutes so that the resulting soft dough will "set" a little bit (this is only necessary if you use gluten flour.)
In a pot, put about 4 cups add to it 1/2 onion, 1/2 sweet pepper, 1 Tbsp. sweet paprika powder, salt to taste as it begins to boil cut pieces of the dough and drop them into the boiling water. Cook for about 25 minutes. Drain.
Prepare you favorite tomato sauce (spaghetti-style) and drop the pieces of nuggets into this sauce and cook in the sauce for approximately 10 minutes.
Serve as a aside dish for rice, potatoes, sweet squash, steamed vegetables, baked yams, you name it!

Ever wanted to make your own vegan nuggets at home? Well, now you can! It will not cost you an arm and a leg, it will not be terribly laborious, you will know everything that is in them, they will be totally vegan, very nutritious and absolutely delicious! Would you like to try your hand at it? Here is the recipe:

1/2 cup all pupose flour
1/2 cup soy flour
2 cups cooked lentils, well drained
1 medium size potato, peeled and cubed
1 medium tomato, chunked
1 medium size onion, peeled and sliced
1/2 cup sweet red and green peppers
1 tsp. garlic powder
1 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
1/4 tsp. marjoram
1/4 gluten flour
1/2 cup water

Note: If you are allergic to gluten, substitute the gluten flour for 1/4 cup cornstarch.

In a blender with the 1/2 cup water, process the potato, peppers, tomato, onion and lentils till smooth. Scrape onto a bowl, add the rest of the ingredients. Barely "paint" a skillet with olive oil and with a tablespoon, take portions of the dough and drop them into the skillet. Cook the nuggets on all sides till golden brown.

These are scrumptious, the texture is very good and they are very nutritious!
The surprising thing is that they do not taste like lentils at all, yet the flavor is superb!

1 ½ cups lentils cooked
½ cup oatmeal
½ cup millet, cooked to the consistency of rice
½ cup wheat germ
¾ cup whole wheat bread crumbs (you can make your own by toasting your bread and pulverizing it in the blender or food processor)
1/3 cup sliced almonds
½ cup all purpose flour
3 Tbsp. cornstarch (as a binder)
1 large carrot, peeled and sliced
1 stalk celery, washed and sliced
1 tomato, seeded and chopped
1/3 cup sweet peppers, seeded and chopped
½ cup parsley, chopped
½ cup chopped onion
1 Tbsp. garlic powder
3 Tbsp. sweet paprika powder
Salt to taste

In a blender with barely enough to water to process, put the tomato, celery, onion, carrot, pepper and parsley, process till smooth. Scrape into a bowl. Add the rest of the ingredients and blend well till your have a soft dough. Form the burgers with your hands
And cook them on a skillet barely “painted” with olive oil until golden brown on both sides. Serve them topped with your favorite sauce.

Serves 3, depending on the size you make them, there could be more servings!

Lentils are marvellous powerhouses of protein, vitamins and minerals. They are very versatile and can be prepared in a variety of ways. This is one delicious and easy way to prepare them.
2 cups lentils
3 bay leaves
1 large onion, peeled and cut in half
1 Tbsp. garlic powder or 2 large garlic cloves, peeled (whole)
1 Anaheim pepper, seeded and chopped
3 Tbsp. sweet paprika powder
2 Tbsp. chopped fresh cilantro
1 cup tomato sauce
Salt to taste
1/4 cup olive oil
Water to cover lentils

Cover the lentils with water, add the 3 bay leaves. boil till soft, add the rest of the ingredients and cook till you have a nice, thick sauce. Serve as a side dish for rice, mashed potatoes, baked yams, etc.

Lentil Minestrone

Minestrone soups are absolutely delicious. They are hardy to be easten by themselves almost like a full meal, accompanied only by a salad. But you can add rice or bread also.
This minestrones is very easy to make a very tasty!

In a medium pot, cover the lentils with about 2 inches of water and bring to a boil. Bil in medium to high heat for about 5 minutes. While lentils boil, put in a blender the following:
1/4 cup Anaheim peppers, seeded and chopped
1/4 cup Red Bell peppers, seeded and chopped
1 Roma tomato, seeded and chopped
1/2 red onion, peeled and chunked
process till smooth with a little water and add to the cooking lentils.
Then, let them simmer (without adding salt) till tender (about 10 more minutes).
When lentils are beginning to get tender, (after simmering for 10 minutes)
add
1 peeled and sliced carrot
1 celery stalk, chopped
1 Tbsp. garlic powder
Salt to taste
2 Tbsp. olive oil
1 bay leaf
3 Tbsp. tomato sauce
1/2 cup squash, peeled and cubed.
Let vegetables cook int he lentils until they begin to soften.
Add
1 cup pasta of your choice (macaroni, fusilli, conchigliette, etc. It can be whole wheat or any other kind according to your preference.)
Let pasta cook till al dente.
Serve.

Serving options:

You can serve together with a crusty Peasant bread, with rice cooked separately, or as is.
Yiedl depends on size of serving portions. It can serve two to 4 people.

Lentil Croquettes
1 cup soy flour
3 Tbsp. cornstarch
1 medium size red onion
1 Roma tomato
Salt to taste
1/2 cup walnuts or sunflower seeds, raw
1 potato
1/2 tsp. coriander powder
1/2 tsp. sage powder
2 Tbsp. sweet paprika powder
1/4 cup water
1 Tbsp. olive oil
3 cloves fresh garlic
1 carrot grated (raw)

Put in the blender the onion, garlic, potato, Roma tomato, the nuts and the water and blend till smooth.
Scrape into a bowl. Add the rest of the ingredients and incorporate. Form patties.
Bake for 30 minutes at 350ยบ F or till golden brown, turning once.

Serve as is or topped with your favorite sauce or gravy.
