Tasty Herbed Patties

Best Blog Tips

2 cups oats (quick)
1/2 cup wheat germ
1/2 cup whole wheat flour
1/2 cup walnuts (ground)
2 Tbsp. sweet paprika powder
Salt to taste
1 Tbsp. olive oil
1 tsp. garlic powder
1 Tbsp. onion powder or to taste
1/2 tsp. cumin
1/2 tsp. Italian Seasoning

In a bowl, mix all ingredients, adding water little by little, till you have a soft dough that is not runny.
Form patties the size you prefer and cook them in a skillet barely "painted" with olive oil until golden brown
on both sides.

Yield depends on size of patties.

Yummy Lentil Nuggets a la Salsa

This is the same recipe we made before but prepared in a different way, which will produce an entirely different texture and flavor.

To the Basic Recipe:
1/2 cup all pupose flour
1/2 cup soy flour
2 cups cooked lentils, well drained
1 medium size potato, peeled and cubed
1 medium tomato, chunked
1 medium size onion, peeled and sliced
1/2 cup sweet red and green peppers
1 tsp. garlic powder
1 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
1/4 tsp. marjoram
1/4 gluten flour
1/2 cup water

Add the following:
1 cup all purpose
1/2 gluten flour
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. Marjoram

In a blender with the 1/2 cup water, process the potato, peppers, tomato, onion and lentils till smooth.
Scrape onto a bowl, add the rest of the ingredients. Cover and let rest for a few minutes so that the resulting soft dough will "set" a little bit (this is only necessary if you use gluten flour.)
In a pot, put about 4 cups add to it 1/2 onion, 1/2 sweet pepper, 1 Tbsp. sweet paprika powder, salt to taste as it begins to boil cut pieces of the dough and drop them into the boiling water. Cook for about 25 minutes. Drain.
Prepare you favorite tomato sauce (spaghetti-style) and drop the pieces of nuggets into this sauce and cook in the sauce for approximately 10 minutes.
Serve as a aside dish for rice, potatoes, sweet squash, steamed vegetables, baked yams, you name it!

These are quite easy to make and if you are having company, you can put them on the side of just about anything and they'll love'em!
1 1/2 cup oats

1/4 cup gluten flour (if allergic to gluten, substitute with 3 tbsp. cornstach)
1/2 cup wheat germ
1/2 cup walntus
1 tbsp. fresh parsely, minced
2 Tbsp. sweet paprika powder
2 tsp. garlic powder
2 tsp. onion powder
Salt to taste
1/2 tsp. Italian Seasoning
1/2 cup water or more

Pulverize your walnuts in a blender or food processor, drop into a bowl. Add the rest of the ingredients and mix them well, adding
the water little by little until you have a dough. If dough is too stiff, add a bit more water. Form little rollies withe palms of
your hands and put them in a large plate. Heat skillet barely "painted" with olive oil and cook the rollies until golden on all sides.

They make a delicious side dish for many, many meals!

Ever wanted to make your own vegan nuggets at home? Well, now you can! It will not cost you an arm and a leg, it will not be terribly laborious, you will know everything that is in them, they will be totally vegan, very nutritious and absolutely delicious! Would you like to try your hand at it? Here is the recipe:

1/2 cup all pupose flour
1/2 cup soy flour

1/2 cup sweet red and green peppers
1 tsp. garlic powder

Note: If you are allergic to gluten, substitute the gluten flour for 1/4 cup cornstarch.

In a blender with the 1/2 cup water, process the potato, peppers, tomato, onion and lentils till smooth. Scrape onto a bowl, add the rest of the ingredients. Cover and let rest for a few minutes so that the resulting soft dough will "set" a little bit (this is only necessary if you use gluten flour.)


Barely "paint" a skillet with olive oil and with a tablespoon, take portions of the dough and drop them into the skillet. Cook the nuggets on all sides till golden brown.

These are tremendously tasty and satisfying. You can even serve them for company and they don't have to be served between two pieces of bread, they go well as a side dish for many other things!
1 cup cooked lentils
1/2 cup cracked wheat cooked till it is soft, like rice (drained)
1/2 cup wheat germ
3/4 cup brown rice, cooked (could be leftovers)
2 Tbsp. nutritional yeast (this is not baker's yeast but a special yeast you buy to season food at health food stores and specialty stores)
Salt to taste
1/4 cup gluten flour (Do Pep) (If you are allergic to gluten flour, substitute it with 1/2 cup cornstarch)
1/2 cup all-purpose flour
1 Tbsp. garlic powder
1 medium red onion, peeled and chopped
3 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
1/2 cup sweet green and red peppers, seeded and chopped
1 medium sized tomato, seeded and chopped
3/4 cup water

In a blender, process rice, lentils, cracked wheat, onion, sweet peppers and tomato with half of the water till smooth.
Scrape into a bowl. Add the rest of the ingredients, mixing well and incorporating the water in little by little so that the mixture will
not be runny. Form steaks with your hands and flatten them. Cook them in a skillet, barely "painted" with olive oil till golden brown on both sides.
Serve with your favorite sauce.

Serves 4.

Gone In A Hurry Bread Pudding

This one doesn't last for long at our home and it won't at yours either! It is easy to make and you can use up all your old bread, which is a bonus! I shared another bread pudding before but this recipe is slightly different and just as yummy!

1 whole wheat bread (could be leftover stale bread)
2 cups soy milk or a little more
3/4 cup brown sugar or more if so desired
1/2 tsp. salt
1/2 cup raisins
1/2 cup sliced almonds
1/4 cup pitted date pieces
10 or 12 prunes, pitted

In a bowl, shred the bread, pour the milk on it and let it soak through. If you need a bit more to thoroughly soak the bread, add it cautiously, you don't want it to be too runny. Add the rest of the ingredients, except the prunes, forming a dough that is not too loose. Taste for sugar. If you would like to, add more. Mix thoroughly.
Put mixture in a baking dish and bake at 350º F for 40 minutes. Meanwhile, prepare the syrup.
In a small saucepan, put the prunes, cover them with water and add 3 to 4 tablespoons of brown sugar and cook over a medium heat until you have a light syrup. When the bread pudding is done, pour the syrup on top while still in the baking dish and let it soak into the pudding.

Serves 4

In a blender, process till smooth the potato, the tomato and the Anaheim pepper.
Scrape into a bowl. Add the rest of the ingredients and mix well. Form patties the size you like best.
Cook in a skillet barely "painted" with olive oil until golden brown on both sides.

3/4 cups water

Put the bread to soak in the water. Grate the onion and the potato in a bowl, add the bread and the rest of the ingredients.
Form the patties and cook in a skillet barely "painted" with olive oil until golden brown on both sides.

If you made a nice, warm pot of our Hearty Vegetable Soup, make sure there are leftovers! They are the basis of these delicious and easy croquettes.

3/4 cup all purpose flour

1 cup bread crumbs
1 tsp. sweet paprika powder
1 tsp. garlic powder
1 Tbsp. onion powder
Salt to taste (if needed)
2 cups vegetables leftover from the Hearty Vegetable Soup
1/4 teaspoon cumin
1/4 teaspoon brown sugar
1/8 teaspoon Italian Seasoning
1 Tbsp. tomato sauce

With the side of a fork, cut the leftover vegetables in small pieces, dump them into a bowl. Add the rest of the ingredients, mixing well till you have a dough. Form croquettes qith yourhands and cook them in a hot skillet barely "painted" with olive oil until they are golden brown on both sides.

Gluten-FREE Breaded Eggplant Rounds

1 large eggplant, sliced in 1-inch thick slices
Put some salty water in a bowl, then dunk the slices in the water and drain them and dry them iwth a paper towel, putting them in a plate.
Prepare your Breading mixture as follows:
In a bowl, mix
1/2 cup soy flour
1/2 cup cornmeal
1/4 cup tapioca flour
2 Tbsp. onion powder
1/2 tsp. garlic powder
Salt to taste
1/2 tsp. Italian Seasoning (pulverized)
1 Tbsp. sweet paprika powder
1 Tbsp. olive oil
Water (start with 1/2 cup of water, adding little by little until you have the consistency of a pancake batter). Set aside.
Grease up a c ookie sheet with a little bit of olive oil. Then take one slice of eggplant at a time and with a spoon, taking some of the
batter, coat one side of the eggplant round, letting the batter drop on top of it, Carefully place on the greased cookie sheet, with the
side has not been coated in batter facing up and the side covered with batter facing down. Coat the top side in batter as it lies on the
cookie sheet. Repeat with all the rounds.
Bake at 300º F for around 15 minutes, check on it and if the bottom is already golden brown, turn it over and cook on the other side.

1/2 cup millet flour
1/2 cup soy flour
1/4 cup walnut pieces

Half an onion (medium) coarsely chopped
1/2 tsp. Italian Seasoning (this herb blend contains sweet basil, oregano, and other herbs, or use herbs of your choice)
1 Tbsp. olive oil
In a blender, process the brown rice, the walnuts and the onion till smooth.
Scrape into a bowl and add the rest of the ingredients, blending well.
Form patties, we did really flat ones, which cooked nicely but you can make them as you want to.
Place them on a cookie sheet greased with a little bit of olive oil and bake at 350º F until golden brown, turning once and browning on both sides.
Serve as is or with a sauce or gravy of your choice.

economical and can be prepared in a very scrumptious way that is at the same time very easy.





New Garbanzo Patties


1/2 cup sesame seeds
2 cups cooked garbanzos
1/2 cup oats
1 cup bread crumbs
1 medium size potato
1 medium size carrot, peeled and sliced
1/2 cup red onion, peeled and chopped
1 Roma tomato, seeded
Salt to taste
1 tsp. granulated garlic
1/2 cup All-purpose flour
1/2 cup water
1 tsp. Italian Seasoning (or 1/8 tsp. sage, 1/8 tsp. oregano and 1/8 tsp. sweet basil)
2 Tbsp. sweet paprika powder
1/4 cup Anaheim peppers, chopped (or any sweet green peppers you have at hand)
1 Tbsp. olive oil

Put in blender the grabanzos, the potato, carrot, red onion, tomato, Anaheim peppers with half of the water. Process till smooth.
Scrape into a blender and add the oats and hte sesame seeds and mix well, till the oats are really soft. Add the rest of the ingredients and make a soft dough. If necessary, add the rest of the water. Form the patties with your hands of the size you want them and bake them at 350º F.
After 15 minutes, turn them over and continue baking till golden brown.
Serve with any sauce or gravy or as is.

Delicious Eggplant "meats"

These are very, very tasty, and go well with rice, potatoes,
sweet potatoes, yams, you name it.They make a great side dish
or can be used as a morsel in abuffett table, like for a wedding,
or a large gathering of people or a church fellowship dinner.
They go wonderfully well with a savory spaghetti sauce.

1 eggplant, peeled, washed and cubed small.

In a bowl prepare a mixture of the following:

3 Tbsp. wheat germ
1/2 cup quick oats
1 Tbsp. onion powder
1/2 tbsp. garlic powder
1 tsp. sweet paprika powder
1/2 tbsp. Italian Seasoning
Salt to taste
1 cup whole wheat bread crumbs (you can make your own whole wheat bread crumbs by toasting bread and then pulverizing it in the blender or food processor)
at least 3 cups of whole wheat flour
1 tsp. olive oil
Mix all well.
Add eggplant and coat very well in the mixture. pressing down for form a dough.
Shape into croquettes or patties and bake at 300 degrees in the oven until golden
brown, flipping once to get both sides done.
Serve well coated with sauce.

Variation:
Glazed Eggplant "Meatballs"

This one looks very fancy and is suitable for a nice table for guests.
Serve with mounds of mashed potatoes, or baked yams or rice,
or add to a pasta dish!

Prepare the above recipe but roll into meatballs instead of patty shape.
While baking, baste them in the following sauce:

1/2 cup prepared homemade spaghetti sauce (your favorite)
1/2 cup pineapple jelly or 4 Tbsp. honey
