Sweet Fruity Pudding

Desserts can be wholesome and yummy at the same time. They can be simple and yet scrumptious. This pudding has all of those characteristics! And it is very easy to make too!

2 cups brown rice, cooked without salt nor oil. (Follow package instructions, but do not season. Make sure rice is soft.)
1 apple, peeled, seeded and cut in small chunks
1 cup crushed pineapple, drained
1 large banana, peeled and sliced
1/2 tsp. salt
1/2 cup brown sugar or to taste
1 cup tofu, drained and mashed
1 cup soy milk or more, if needed
1/2 cup raisins
1/4 cup sliced almonds (raw)

In a bowl, mix all the ingredients and drop the mixture into a greased bowl.
Bake at 350º F till top is golden brown (about 30 minutes).
Serve when cool.
You can add a dollop of cashew cream on top, if you like.

These are quite easy to make and if you are having company, you can put them on the side of just about anything and they'll love'em!
1 1/2 cup oats
1 cup brown rice (medium grain) cooked
1/4 cup gluten flour (if allergic to gluten, substitute with 3 tbsp. cornstach)
1/2 cup wheat germ
1/2 cup walntus
1 tbsp. fresh parsely, minced
2 Tbsp. sweet paprika powder
2 tsp. garlic powder
2 tsp. onion powder
Salt to taste
1/2 tsp. Italian Seasoning
1/2 cup water or more

Pulverize your walnuts in a blender or food processor, drop into a bowl. Add the rest of the ingredients and mix them well, adding
the water little by little until you have a dough. If dough is too stiff, add a bit more water. Form little rollies withe palms of
your hands and put them in a large plate. Heat skillet barely "painted" with olive oil and cook the rollies until golden on all sides.

They make a delicious side dish for many, many meals!

Ever wanted to make your own vegan nuggets at home? Well, now you can! It will not cost you an arm and a leg, it will not be terribly laborious, you will know everything that is in them, they will be totally vegan, very nutritious and absolutely delicious! Would you like to try your hand at it? Here is the recipe:

1/2 cup all pupose flour
1/2 cup soy flour
2 cups cooked lentils, well drained
1 medium size potato, peeled and cubed
1 medium tomato, chunked
1 medium size onion, peeled and sliced
1/2 cup sweet red and green peppers
1 tsp. garlic powder
1 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
1/4 tsp. marjoram
1/4 gluten flour
1/2 cup water

Note: If you are allergic to gluten, substitute the gluten flour for 1/4 cup cornstarch.

In a blender with the 1/2 cup water, process the potato, peppers, tomato, onion and lentils till smooth. Scrape onto a bowl, add the rest of the ingredients. Cover and let rest for a few minutes so that the resulting soft dough will "set" a little bit (this is only necessary if you use gluten flour.)


Barely "paint" a skillet with olive oil and with a tablespoon, take portions of the dough and drop them into the skillet. Cook the nuggets on all sides till golden brown.
Enjoy!

Delicious Flat Vegan Steaks

These are tremendously tasty and satisfying. You can even serve them for company and they don't have to be served between two pieces of bread, they go well as a side dish for many other things!
1 cup cooked lentils
1/2 cup cracked wheat cooked till it is soft, like rice (drained)
1/2 cup wheat germ
3/4 cup brown rice, cooked (could be leftovers)
2 Tbsp. nutritional yeast (this is not baker's yeast but a special yeast you buy to season food at health food stores and specialty stores)
Salt to taste
1/4 cup gluten flour (Do Pep) (If you are allergic to gluten flour, substitute it with 1/2 cup cornstarch)
1/2 cup all-purpose flour
1 Tbsp. garlic powder
1 medium red onion, peeled and chopped
3 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
1/2 cup sweet green and red peppers, seeded and chopped
1 medium sized tomato, seeded and chopped
3/4 cup water

In a blender, process rice, lentils, cracked wheat, onion, sweet peppers and tomato with half of the water till smooth.
Scrape into a bowl. Add the rest of the ingredients, mixing well and incorporating the water in little by little so that the mixture will
not be runny. Form steaks with your hands and flatten them. Cook them in a skillet, barely "painted" with olive oil till golden brown on both sides.
Serve with your favorite sauce.

Serves 4.

1 cup of cracked wheat, cooked until soft (to the consistency of rice)
1 cup oats
1 1/2 cups whole wheat bread, toasted and grated or pulverized in the blender
3 Tbsp. sweet paprika powder
1 medium red onion, peeled and chopped
1 Tbsp. garlic
Salt to taste
1 Plum or Roma tomato
1 tsp. Italian Seasoning or 1 tsp. oregano, 1/2 tsp. rosemary, 1 tsp. sweet basil
1 Tbsp. cumin
1/2 cup red Bell peppers, chopped
1/4 cup Anaheim peppers (or similar mild peppers), chopped
2 Tbsp. olive oil
4 Tbsp. cornstarch (each Tbsp. equals 1 egg as binder)

Put cracked wheat in blender with onion, tomato and peppers, process till smooth. Scrape into a bowl.
Add all the other ingredients and mix thoroughly.
"Paint" a skillet with olive oil. Form your patties with your hand or use a half measuring cup and
scoop the mixture into the skillet, tapping gently until the mixture is released. Let set and flip.
Cook till golden brown.

Yields about 6 to 8 patties, depending on size you make them.

These are absolutely delicious and very tasty. Easy to make and versatile as can be!
You can use them as a side dish or if you're making a quick lunch, just make them the center of the meal, add one of our
delicious sausage or meatballs recipes, a good raw salad and you've got a meal! The last time they were made at our home, they were accompanied by rice with vegetables and a green salad.

1 cup yellow cornmeal
2 Tbsp. unbleached flour
1 cup whole kernel corn from can or frozen (thawed)
1 Tbsp. olive oil
Salt to taste
2 Tbsp. soy flour
1/2 cup soy milk
1 Tbsp. anise seeds (vital for this recipe's delicious flavor, don't leave them out!)
Enough water to form a light dough

Put kernel corn with a little bit of water, process till smooth, scrape into a bowl, add the rest of the ingredients, mixing well till all is well combined. You must have a soft dough, not a batter, not a runny mixture. Grease a skillet with olive oil. Take large spoonfuls of the mixture and drop them in the hot skillet. Cook till golden on both sides.

1 Roma tomato

1 Tbsp. olive oil
3 cloves fresh garlic
1 carrot grated (raw)

Put in the blender the onion, garlic, potato, Roma tomato, the nuts and the water and blend till smooth.
Scrape into a bowl. Add the rest of the ingredients and incorporate. Form patties.
Bake for 30 minutes at 350º F or till golden brown, turning once.

Serve as is or topped with your favorite sauce or gravy.

More Vegan Sausages These are REALLY GOOD!




Savory Vegan Sausages

1 1/2 cup quick oats
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
1 tsp. Italian Seasoning
Salt to taste
1 cup breadcrumbs (you can make your own breadcrumbs by toasting your whole wheat bread and then pulverizing it in a blender or food processor, you can season them a bit if you like)
1 medium potato, raw, peeled
1/2 tsp. thyme
1/4 cup peppers (Anaheim are best, but if you don't have htem, Bell peppers)
1 medium size red onion
173 cup soy flour
1/2 cup sunflower seeds
1 cup water
1/3 cup vital gluten
1 Tbsp. olive oil

Peel your potato. In a blender, put the potato, the onion, and the sunflower seeds with less than 1 cup of water. Process till smooth and scrape into a bowl. Set aside.
Mix the quick oats with the vital gluten and all the dry seasonings. Then incorporate this dry mixture into the wet mixture, slowly adding the rest of the water, until you
have a dough. Take portions of that dough with your hands and roll them into sausage shape. Bake them at 400º F for 15 minutes, then lower the temperature to 350º F, turning them around, till they are golden brown on every side.
If you have the time, steam them, that will make them moist and chewy.

I know there are people who like to fry. i do not encourage frying since there are cardiovascular dangers associated with it.
That is the reason why I sugest steaming or baking.

Yield: Approximately 16 sausages.
You can make these and freeze them for using in many dishes.
If you want to use them in beans, stews and soups, you must use more vital gluten so that your sausages won't fall apart int he boiling liquid as it coooks. You can also scramble them with tofu, both whole and in slices,
add them to pasta, rice, potatoes cooked in tomato sauce, and many other dishes.

Variations:

1. Fried Sausages. If you absolutely must fry these sausages, fry them in olive oil, which is the healthier alternative. The following photo shows the sausages fried.










2. Savory Vegan Sausages with Tofu in Tomato Sauce:
First, cook your sausages following the recipe given above (you can bake them, steam or fry them). After you have cooked them, put in a small pot 1 cup of your favorite prepared tomato pasta sauce, heat it up and add sausage slices and 1 cup of tofu chunks. Cook till the sausage slices are moist and the tofu has absorbed the sauce. About 10 minutes at slow heat (if it boils, the tofu will just break apart). It is delicious as a side dish, especially for a breakfast or for a quick lunch. You can also use less sauce and prepare these for pita pockets or tortilla wraps (too much sauce will make them drip and mess up your pitas or wraps).
3. Sausage Chunks: You simply make your sausage dough, grab the dough by thick pieces, forming odd chunks with your hands and cook as before. These were then simmered for a few minutes in a spaghetti-style tomato sauce. They are delicious with potatoes, yams, baked squash, sweet potatoes and even rice! See how they look below.










4. Savory Sausages in Tomato Sauce: Finally, you can simmer them a bit in your favorite tomato pasta sauce and of course add them to your pasta or just use them as a side dish for baked potatoes or whatever you are having.
