Lentil Croquettes
1 cup soy flour
3 Tbsp. cornstarch
1 medium size red onion
1 Roma tomato
Salt to taste
1/2 cup walnuts or sunflower seeds, raw
1 potato
1/2 tsp. coriander powder
1/2 tsp. sage powder
2 Tbsp. sweet paprika powder
1/4 cup water
1 Tbsp. olive oil
3 cloves fresh garlic
1 carrot grated (raw)

Put in the blender the onion, garlic, potato, Roma tomato, the nuts and the water and blend till smooth.
Scrape into a bowl. Add the rest of the ingredients and incorporate. Form patties.
Bake for 30 minutes at 350ยบ F or till golden brown, turning once.

Serve as is or topped with your favorite sauce or gravy.
