1 large eggplant, sliced in 1-inch thick slices
Put some salty water in a bowl, then dunk the slices in the water and drain them and dry them iwth a paper towel, putting them in a plate.
Prepare your Breading mixture as follows:
In a bowl, mix
1/2 cup soy flour
1/2 cup cornmeal
1/4 cup tapioca flour
2 Tbsp. onion powder
1/2 tsp. garlic powder
Salt to taste
1/2 tsp. Italian Seasoning (pulverized)
1 Tbsp. sweet paprika powder
1 Tbsp. olive oil
Water (start with 1/2 cup of water, adding little by little until you have the consistency of a pancake batter). Set aside.
Grease up a c ookie sheet with a little bit of olive oil. Then take one slice of eggplant at a time and with a spoon, taking some of the
batter, coat one side of the eggplant round, letting the batter drop on top of it, Carefully place on the greased cookie sheet, with the
side has not been coated in batter facing up and the side covered with batter facing down. Coat the top side in batter as it lies on the
cookie sheet. Repeat with all the rounds.
Bake at 300º F for around 15 minutes, check on it and if the bottom is already golden brown, turn it over and cook on the other side.

These are really delicious and it cannot get easier than this! It is also a GLUTEN FREE recipe.
1 1/2 cup brown rice, cooked
1/2 cup millet flour
1/2 cup soy flour
1/4 cup walnut pieces
Salt to taste
1/2 tsp. turmeric
1 Tbsp. sweet paprika powder
1/2 tsp. garlic powder
Half an onion (medium) coarsely chopped
1/2 tsp. Italian Seasoning (this herb blend contains sweet basil, oregano, and other herbs, or use herbs of your choice)
1 Tbsp. olive oil
In a blender, process the brown rice, the walnuts and the onion till smooth.
Scrape into a bowl and add the rest of the ingredients, blending well.
Form patties, we did really flat ones, which cooked nicely but you can make them as you want to.
Place them on a cookie sheet greased with a little bit of olive oil and bake at 350º F until golden brown, turning once and browning on both sides.
Serve as is or with a sauce or gravy of your choice.

1 cup soy beans, boiled, drained
1/2 cup quick oats
1/2 cup soy flour
1/2 cup cornflour
3/4 cup all-purpose flour
1/2 cup breadcrumbs
1/3 cup sesame seeds
Salt to taste
2 Tbsp. onion powder
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
1/2 cup water
1 Tbsp. olive oil

Put soy beans with the water in a blender, process till smooth.
In a bowl, mix with all of the other ingredients, until you have a soft dough that is not too soft.
You must be able to form the nuggets. Taking small portions with your fingers, form the small nuggets.
Place on a baking sheet already oiled with olive oil. Bake at 350º F util golden brown, turning to brown on all
sides.
If you want to fry them (which I don't like to encourage because it raises cholesterol, please fry them in olive oil.)

Garbanzos are very nutritious, they are rich in Calcium, Iron, Folate, and Thiamin, among other nutrients. They are also
economical and can be prepared in a very scrumptious way that is at the same time very easy.





New Garbanzo Patties


1/2 cup sesame seeds
2 cups cooked garbanzos
1/2 cup oats
1 cup bread crumbs
1 medium size potato
1 medium size carrot, peeled and sliced
1/2 cup red onion, peeled and chopped
1 Roma tomato, seeded
Salt to taste
1 tsp. granulated garlic
1/2 cup All-purpose flour
1/2 cup water
1 tsp. Italian Seasoning (or 1/8 tsp. sage, 1/8 tsp. oregano and 1/8 tsp. sweet basil)
2 Tbsp. sweet paprika powder
1/4 cup Anaheim peppers, chopped (or any sweet green peppers you have at hand)
1 Tbsp. olive oil

Put in blender the grabanzos, the potato, carrot, red onion, tomato, Anaheim peppers with half of the water. Process till smooth.
Scrape into a blender and add the oats and hte sesame seeds and mix well, till the oats are really soft. Add the rest of the ingredients and make a soft dough. If necessary, add the rest of the water. Form the patties with your hands of the size you want them and bake them at 350º F.
After 15 minutes, turn them over and continue baking till golden brown.
Serve with any sauce or gravy or as is.
