Split Pea Vegan Minestrone

2 cups split peas, pre-cooked
1 onion, peeled
1 Tbsp. garlic powder or 2 large cloves garlic, peeled and mashed
1 Roma or Plum tomato, sliced
1/2 cup Anaheim peppers and red Bell peppers, seeded and sliced

Salt to taste
2 carrots peeled and cut in pieces
2 potatoes, peeled and cubed
1 cup pasta of your choice
1 cup yellow sweet squash of your choice, peeled and cubed
2 Tbsp. sweet paprika powder
3 Tbsp. tomato sauce
1 celery stalk, sliced
1/2 tsp. Italian Seasoning
3 Tbsp. olive oil
1/2 cup white cabbage leaves, cut in pieces

When your split peas are cooked, add all the vegetables and seasonings, except the cabbage and the pasta, adding enough water to cover the vegetables and make a thick soup.When vegetables are beginning to get tender, add the pasta and the cabbage and cook until the pasta is al dente (see package for instructions). Serves 3 to 4 according to size of portions.




You can serve this soup as is or with a side dish of brown rice.

Quinoa Meatless Meatloaf

This is a delicious recipe and easy as pie to make!
1 cup quinoa, cooked
1- 1/2 cups soy flour
3/4 cup oats
3/4 cup brown rice cooked
1 medium onion, peeled and coarsely cut
3 Tbsp. Do-Pep or gluten flour
Salt to taste
1 Tbsp. garlic powder
2 Tbsp. olive oil
2 Tbsp. sweet paprika powder
1 small beet or 2 Tbsp. beet powder
1/2 cup green and red Bell peppers, chopped
1 tsp. ground coriander
1/4 tsp. oregano powder
1/4 tsp. sage powder
1/2 tsp. tarragon powder, optional but fives great taste

In a blender put the onion with the peppers and the beet (if you are not using powder)
blend with a little water until smooth. Scrape into a bowl and add the rest of the ingredients,
leaving the Do-Pep for last. Incorporate well until thoroughly blended, let it rest for about
15 minutes till Do-pep works on the mixture. Put into a baking dish and bake at 350º F
until golden brown. Watch well so that it will not burn.
Serve with your favorite sauce or gravy.

Variation: If you would like to have a firmer loaf, to make it easier for you to slice the leftovers for sandwiches, add 3 slices of whole wheat bread, cubed, to the dough mix as you are preparing it.

4 large potatoes, peeled and chunked
place in a bowl, add salt to taste
3 Tbsp. sweet paprika powder
1 Tbsp. garlic powder
2 Tbsp. onion powder
2 Tbsp. olive oil
you toss the potatoes in this, adding little by little 1/2 cup of water
Add all of this to a baking dish and bake at 400º F for 1 hour.
Serve with a nice green salad and any side dish you like.

Tasty Scrambled Tofu with Olives
Take a block of tofu and put it in the freezer overnight. When brick hard, thaw it and squeeze all the water out, as much as you can. Break it up with a fork. Put it in a skillet with red and green peppers, garlic powder to taste, 1 small onion, sliced, 1 Roma tomato, chunked, 2 tbsp. olive oil, 1/2 tsp. Italian Seasoning or herbs of your choice, add as many olives as you want and cook it for about 15 minutes.
Makes a nice side dish for this or any dish!

Quinoa and Oats Burgers

These burgers are really delicious and well worth making in a large batch! You can freeze some of them and reheat for later use.
1 cup Old Fashioned oats
1 cup Quinoa, cooked according to package instructions
1 medium size potato
1 cup soy flour
3 slices of whole wheat bread
Salt to taste
1 onion
1/2 cup Anaheim peppers
1/2 cup red bell peppers
1 Tbsp. garlic powder
1 medium size beet
3 Tbsp. sweet paprika powder
3 Tbsp. nutritional yeast
1 1/2 cup Do-Pep (or gluten flour, sold in health food stores and vegan nutritional stores)
1/2 tsp. coriander, ground
1/2 tsp. sgae ground
1/2 tsp. oregano, ground
Put the oats and the bread in a bowl covered with water. Let them soak it till very soft. In the blender, put the potato, the onion, peppers and beet with very little water (about 1/4 cup) and process till smooth. Scrape unto a bowl. Add the now mixture of bread and oats and mix in all the rest of the ingredients. When you have them well combined, add the Do-Pep (always add it last).
Let the dough rest for about 20 minutes so that the Do-Pep can work on it (the purpuse is that the burgers will be firmer and not fall apart). Then, taking portions of the dough with your hands, form the burgers in the size you want and bake them in a non-aluminum, greased pan at 300º F until golden brown.
Serve them in a bun with trimmings, or covered withyour favorite sauce or gravy as a dish for rice, potatoes, yams, anything you like!

This recipe is almost like a tasty and easy quiche, so if you love those, you'll rave about this dish!
1 medium sized eggplant
2 medium size potatoes
1 1/2 cup whole wheat bread crumbs (make your own by toasting your bread and then pulverizing it in the blender or food processor)
1/2 cup Anaheim and red Bell pepper (combined, not 1/2 of each), chopped
1 tsp. garlic powder
2 Tbsp. sweet paprika powder
Salt to taste
1/4 cup nuts (optional)
3 Tbsp. tomato sauce
2 Tbsp. olive oil
3 Tbsp. corn starch
1 medium size onion
1/2 tsp. each of coriander seed, ground, and of oregano, ground
1/2 cup of water

Peel off the eggplant and chop it in small pieces. In a blender, put the potatoes, the peppers and the onion with the water and process till smooth.
Scrape the mixture into a bowl. Add all the other ingredients, incorporating them well. Put the mixture into a greased pan or baking dish and bake it at 400º F for 15 minutes. Then lower the temperature to 350º F for 50 minutes or until well done.
Serve with a green salad of your choice. You can even add a side dish of baked yams or potatoes.
